From the perspective of rice cultivation:
The yield per unit area of glutinous rice is lower than that of ordinary rice, and its disease resistance is poor, so it will be more difficult to plant. If the planting is difficult and the yield is low, then you should accept the saying that "scarcity is the most expensive thing", and the price will naturally be relatively expensive. If glutinous rice is taken as the staple food and eaten every day, the cost will be higher than that of ordinary rice, which will also affect some people's choices to some extent.
From the point of view of digestion, glutinous rice contains starch, of which amylopectin is relatively easy to digest because of its many branches and large contact area with digestive enzymes. But it's different for diabetics. Glutinous rice contains a lot of branched-chain amino acids, which will obviously increase blood sugar when eaten in large quantities, which is not conducive to sugar lovers to control blood sugar. Therefore, it is more suitable for making jiaozi, rice cakes and glutinous rice balls on holidays and occasionally tasting them.
From a nutritional point of view, glutinous rice has no advantage. It is refined grain, and its composition is similar to that of refined white rice flour, so its nutritional value is similar.
