Liaocheng, located in the west of Shandong Province, is a national historical and cultural city. In the 26th year of Yuan Zhizheng (1289), Huitong River, which passed through Liaocheng, was carved as an important section of the Beijing-Hangzhou Canal. In the 15th year of Jiaqing in Qing Dynasty (18 10), Mr. Wei Yongtai, a descendant of Jia Wei braised chicken shop, inherited the ancestral braised chicken making technology and learned from the traditional smoking and roasting methods to develop smoked chicken which can be preserved for a long time. Wei's smoked chicken was founded by Mr. Wei Yongtai and passed down from generation to generation by Wei, Wei Shide, Wei Jinlong, Wei Liting and Wei, with a history of nearly 200 years. At that time, merchants rushed to buy them and shipped them to Beijing, Tianjin, Jiangsu, Zhejiang and other places in wooden cases in batches. During the Ming and Qing Dynasties, there appeared many academies in Liaocheng, such as Lindong, Yangping, Guangyue and Wen Qi, with a strong style of study. In the 12th year of Tongzhi in Qing Dynasty (1873), Wei Jinlong, the fourth grandson of Wei Yongtai, was knowledgeable, kept his promise, and carried forward the cause of his ancestors. He asked celebrities to name the smoked chicken shop "Longshengzhai", which means "Dragon wins the world" and "Xianglong wins", and asked Jin Gyeong, then the magistrate of Liaocheng County, to write the name of the shop, which was a masterpiece for a while. In the second year of Xuantong in Qing Dynasty (19 10), due to the breach of the Yellow River, although the canal was dredged, it was still replaced by sea and railway transportation. In addition, 1938, when the Japanese army occupied Liaocheng, the economy gradually declined, and Wei's smoked chicken gradually became a delicacy that only rich officials could enjoy. 1935 In the summer, Mr. Lao She visited Professor Xiao Difei of Shandong University, which coincided with Mr. Xiao eating a roast chicken given by a friend in Liaocheng. They sat down in a pub with Mr. Zhao Shaohou, handed the chicken to the waiter, unpacked it and put it on a plate. The chicken is bright black and fragrant. Lao She tasted it and said it had a special taste, which she had never tasted before. What kind of chicken is it? Mr. Xiao said it was a medicated roast chicken. Please ask Mr. Lao She to give it a name. Mr. Lao She praised the chicken skin for being black and purple, and the iron frame clanked, much like the selfless black Bao Gong in Beijing Opera; There is an Tiegong Temple on the north bank of Daming Lake in Jinan to commemorate Tie Xuan in the early Ming Dynasty. In order to inherit and carry forward the cultural heritage of China cooking, and to commemorate Mr. Lao She, Mr. Xiao was born in China on 1985.

1947, after the liberation of Liaocheng, Wei's smoked chicken maintained production. 1956 Liaocheng food company was established, and smoked chicken was produced and operated by the food company. Wei Liting, the fifth generation descendant of Weishi Smoked Chicken Shop in Longshengzhai, transferred to a state-owned company as an employee, responsible for making smoked chicken. 1984, Wei, the sixth generation descendant of Weishi Smoked Chicken Shop in Longshengzhai, resumed his own business under the guidance of Wei Liting, re-established the old name of Longshengzhai, and made smoked chicken with 18 kinds of drugs and spices in strict accordance with the ancestral technology, using modern processing equipment and through 12 procedures. 1998 Mr. Yu Maoyang, a famous painter and vice president of Liaocheng Normal University, re-engraved the tablet of "Longshengzhai". In order to commemorate the founding contribution of the ancestor Wei Yongtai and create a famous brand to repay the society, the Weishi smoked chicken shop in Longshengzhai applied to the State Trademark Office for registration of the trademarks of "Wei Yongtai" and "Longshengzhai" successively. Continuously improve the level of product packaging, and introduce gift bags, gift boxes and vacuum packaging.
