Tools/raw materials:? sweet wine
Methods/steps:
1. There is a machine for making yogurt or liqueur, which can keep the temperature required for making liqueur.
2. To make wine in winter, you should keep the wine by your side and keep it warm before making wine.
3. Sealed in the closet, wrapped in clothes or quilts, plus two hot water bottles.
4. Piglet electric heating plate can also be used to keep warm.
5. Wrap the quilt and heat the kettle inside.
6. Add a layer of boiling water to keep warm, or turn on the hot air conditioner.
skill
1. Soak glutinous rice first.
Before steaming the glutinous rice in the pot, soak it in clear water until it can be crushed by hand.
It takes more time to soak in winter, about seven or eight hours, and shorter time in summer, about three or four hours.
After soaking, it is ready to be steamed. Spread gauze on the whole, pour in glutinous rice and steam in the pot. Boil water in the pot and steam for about 25 minutes on low heat.
2. Mix sake koji after cooling.
After the glutinous rice is steamed, let it cool, and when the temperature drops to about 40 degrees, sprinkle the koji into the glutinous rice and stir it evenly. 1 kg glutinous rice is similar to 3g distiller's yeast. After stirring, put it into a pot and flatten it, leaving a hole in the middle, and start fermentation after sealing.
3. Fermentation temperature
It is cold in winter, so it must be sealed when fermenting. Without special fermentation tools, it is easy to wrap a quilt outside to keep warm.
Generally, liqueur will ferment in about 7 days, and you can smell the fragrant wine when you open the lid.
Winemaking is best in winter. This wine can be preserved for one year (before spring) without deterioration. It's very hot now, so you should drink for a while, or it will go bad soon.
In winter, wine making should be enclosed, that is, heat preservation, and wine will not be produced until a certain temperature. The approximate temperature is just to feel warm with your hands, so you can take off things around you when you drink wine.
