2. Make lobster brine in three steps:
Step one: weigh water, pepper, chili, and oil, and simmer over low heat for 30 minutes. While simmering over low heat, you can weigh other auxiliary ingredients according to the formula (except for the old braised paste).
Step 2: Dissolve the separately weighed old brine paste, add it to the brine, and simmer over low heat for 20 minutes.
Step 3: Add all the auxiliary materials to the brine, stir and dissolve. After 10 minutes, the shrimps can be braised.
Production process
Soak the crayfish in water for at least 30 minutes. After soaking fully, wash the belly and tail of the lobster with a brush, then remove the lobster tail line, wash it again, and finally Drain.
Heat the pan, pour the oil, when the oil temperature is completely raised (after smoking), add the crayfish and soak in the oil for 1 minute, until the color is bright red, then take it out.
Bring the prepared sweet and spicy brine to a boil, put the oiled lobster into the brine, lower the heat for 5 minutes, soak for 5 minutes, then remove and serve!
