What are the historical allusions of Quanjude?
Historical story:

1. Why is the word "De" missing

Yang Quanren, the founder of Quanjude, asked a scholar named Qian Zilong to write a plaque. This plaque has been hung for more than 13 years after several storms. However, I wonder if you have noticed that the word "Germany" on the Quanjude plaque is missing a horizontal line. Why is this?

Some people say that at that time, Boss Yang invited Qian Zilong, and the two had a good drink. When Yang Quanren learned that Qian Zilong's calligraphy was very good, he immediately took out pen and ink and asked Qian Xiucai to write an inscription. Because Qian Xiucai drank two cups more, he was in a trance. When he didn't pay attention, he forgot to write the word "De".

It was also said that when Yang Quanren started his business, a * * * hired 13 guys, plus 14 people himself. In order to let everyone work with peace of mind and make concerted efforts, Qian Xiucai was asked to write one less line, indicating that everyone can't cross a knife in their hearts. When you hear this, you may ask: Isn't it more wholeheartedly to add a horizontal line?

of course, these are all guesses and legends. What is the real reason? It turns out that as early as more than 1 years ago, "De" was a character like pictograph, with or without a horizontal character. This point can be confirmed by the ink of famous calligraphers in Tang, Song, Yuan, Ming and Qing Dynasties. For example, the word "De" in the Imperial Book "University Monument" by Emperor Kangxi of the Qing Dynasty, which is now located in the Confucius Temple in imperial academy, Beijing, is not horizontal; Another example is the word "De" written by Zheng Banqiao, a painter in the Qing Dynasty who lived in the same period as the founding of Quanjude, some with a horizontal line and some without a horizontal line.

in addition, we can also research the word "de" from the aspect of ancient Chinese coins. For example, the word "De" in Jingde Tongbao, which was cast in Northern Song Zhenzong (AD 14), has no horizontal character, while the word "De" in Xuanzong of Ming Dynasty (AD 1426) has horizontal character.

From the above analysis, we can draw the conclusion that in the past, the word "de" was written in two ways, with or without horizontal, and both of them were correct. In order to keep the original appearance of its plaque, the word "De" on the plaque has been missing a horizontal line.

2. The earliest text advertisement in Quanjude after liberation

In an old book published on November 1, 195, there was an advertisement in Quanjude. Unfortunately, this book has no cover, so we can't know its title. However, from the analysis of the preface, it is a book about Beijing, which is similar to the Beijing Guide. Judging from its publication time, it is one of the earliest text advertisements in Quanjude after liberation. It provides first-hand information for us to study Quanjude in the early days of liberation.

The first half of this advertisement consists of four lines of traditional Chinese characters arranged from right to left:

"When you go to Beijing, you must go to Quanjude, the first famous roast duck expert in Beijing, No.24, Qianmen Wairou Market"

The second half of the advertisement is a column of traditional Chinese characters from right to left:

"After more than a hundred years of careful research, it is rich in nutrition, crisp, tender and delicious, and it is far from being delicious to be cooked by famous Chinese and foreign special teachers.

A total of ***54 words are written in succession, without a punctuation mark. Then there are four lines of small print:

"Telephone reservation seven o six eight, call outside to inform that it will be delivered on time"

From here, we can see that Quanjude's roast duck was very famous at that time, and the elegant dining environment and service were even more needless. Not only can guests eat it in the dining hall, but also the roast duck can be delivered to their doors, and there are service promises of "punctuality" and "no mistake".
