Maotai liquor is named after it is produced in Maotai Town on the Chishui River in northern Guizhou. Because Maotai Town is located in the river valley, the wind speed is low, which is very conducive to the habitat and reproduction of microorganisms brewing Moutai.
Moutai is produced in Maotai Town, renhuai city, Zunyi City, Guizhou Province, China. It is a characteristic liquor of Han nationality, and it is one of the three major distilled liquors with the same reputation as Scotch whisky and French cognac. Since 19 15, Kweichow Moutai * * * has won 15 international gold medals and won the title of China National Famous Wine for five consecutive times. Kweichow Moutai and Zunyi Dongjiu are the only two famous national wines in Guizhou Province. It is the originator of Daqu Maotai-flavor liquor, known as "national liquor" and one of the top liquors in China.
Maotai takes high-quality sorghum as raw material, and wheat is high-temperature koji, but the amount of koji used is more than raw material. The unique techniques such as using more koji, long fermentation period, repeated fermentation and taking wine for many times are the main reasons for the unique style and excellent moral character of Moutai. Maotai liquor is made by adding raw sand twice, fermenting eight times and distilling nine times. The production cycle is as long as eight or nine months, and after more than three years of aging, blending and storage for another year, the quality of liquor is more harmonious, mellow and soft, and it can be bottled and delivered from the factory. The whole production process lasted nearly five years.
Maotai liquor takes wheat as the main raw material, which can be fermented for eight times and stored for two or three years before leaving the factory. Its unique sensory indicators are: white wine is colorless and transparent, mellow and sweet when drinking, without suspended matter and precipitation, outstanding aroma, elegant and delicate, full-bodied, long aftertaste and lasting fragrance in empty cups. Fake "Maotai" is mostly made of sorghum wine, white dry wine and mixed wine. And it is difficult to have the characteristics of color, fragrance and taste of Maotai.
As soon as Moutai was opened, it gave people an inexplicable excitement, and then a strange smell overflowed the room, which surprised everyone. After smelling the fragrance, put it in a cup and observe its color. Pale yellow and transparent, pure and without precipitation. Hold up a glass and shake it gently. Facing the sunshine or moonlight, you can see the thin hops grow along the mouth of the cup and return to extinction. Some people sum it up as four parts: unsealing it to test its truth, swinging incense to observe its color, tasting its taste, and smelling its fragrance in an empty cup.
