A historical review of Mou Dingyou fermented bean curd

In the early days of Mouding, tofu was popular in the streets, markets, and village alleys. It flowed under the scorching pine lamps and in the stone mills, and matured in the old well left by our ancestors—— Shiyang Well.

In 1953, the county trading company built a new Mouding County Food Processing Factory at the east corner of Mouding County, mainly processing pickles and tofu to supply to county-level canteens. In 1956, the Mouding County Food Processing Factory moved to Miaojue Temple outside Dongmen to produce biscuits, candies, fresh tofu, and pickled tofu.

Starting in 1958, the food processing factory used the standard of processing 110 kilograms of dry mold tofu for every 100 kilograms of soybeans, and entrusted the production team of Shijiu Village to process it. The food factory then marinated it in clay pots to make fermented fermented bean curd. The output is approximately 3 to 5 tons. In the winter of 1964, the food processing factory began to try to marinate fermented bean curd with raw sesame oil, with an annual output of about 2.6 tons. In 1966, the formula was improved and the regenerated sesame oil was changed into cooked sesame oil, which improved the fragrance of the product. The process and formula of Mouding fermented bean curd are made by skilled workers who have accumulated experience and estimated the ingredients over the years, so the quality is not very stable. In 1982, the food factory sent technical personnel several times to Guangdong South China Institute of Technology, Kunming and other places to study food processing and inspection technology. It built a laboratory in the factory and drew conclusions based on accurate calculations by the laboratory. At the same time, the right to process fresh tofu will be taken back and the factory will process and produce it in-house.

On August 30, 1986, Mouding County Food Processing Factory registered the "Jingsong" brand fermented bean curd trademark with the State Trademark Administration.

In 1987, the food processing factory invested 300,000 yuan, acquired 11 acres of land next to the county's Nanshan Park, built a new factory building, warehouse, and underground fermentation workshop. At the same time, it purchased a grinding wheel refiner, separator, and boiler from Harbin. Slurry tanks and other equipment began large-scale production. In order to improve the quality of the products, the processing factory changed the pickling process from clay jars to glass bottles. The quality of the products gradually improved, and the annual output reached 170 tons. The products are sold both inside and outside the province. Over the years, the "Jingsong" brand fermented bean curd produced by the Mouding County Food Processing Factory has continued to win awards year after year. In 1994, it was rated as "National "Women and children's favorite product"; in 1996, it won the gold medal at the 3rd China Science and Technology Expo.

In order to expand the scale of production, the food processing factory helped Juntun Township prepare to build the Tiantai Food Processing Factory in 1992, train technical workers, and guide production.

In 1998, because the current mechanism could not meet the needs of the development of the socialist market economy, Mouding Food Processing Factory was reorganized and production stopped.
