What is good juice?
Meiji umami juice is essentially a kind of soy sauce, but it belongs to brewing soy sauce, and its production method is different from ordinary soy sauce. Ordinary soy sauce is made by fermenting soybeans, adding sea salt and fermenting for a long time. Meiji umami juice is made from selected wheat by traditional methods of koji-making, koji-making and saccharification, also known as "three-step natural fermentation".
