Youjiao wine is produced in Youjiao Village, Qiubei County, and is named after the place. In the 55th year of the Qianlong reign of the Qing Dynasty (1790), the Zheng family opened a winery after the Liu family (from Guizhou). By the Jiaqing period, "brewing flourished". Li Caicai (a Yi nationality), the governor of Huguang and an army general in the Revolution of 1911, drank greasy wine when he returned to his hometown to visit relatives in 1922 and said, "I have drunk a lot of good wines in my life as a garrison horse. In comparison, greasy wine is the best." A fine wine that does not disgrace the Yi countryside. "Yijiao wine is made from corn produced in alpine mountainous areas. Under specific climatic conditions, local ponds are used to store rain and snow water, combined with special koji medicine, and distilled through solid fermentation. The eighth month of the lunar calendar every year is the best time to make koji medicine. Every time you make a batch of medicine, you need to prepare dried green leaf vine (Wanaceae herbaceous plants), Pulsatilla (Chinese herbal medicine), etc., put them in a clean wooden basin, stir, and then knead them into paste balls weighing 3 liang each, and put them one by one. Place it on a floor covered with green pine hair, then cover it tightly with green pine hair, let it "sweat" (ferment), "turn over" (change up and down) after 3 to 4 days, and then let it "dress" (use cornmeal) , buckwheat noodles, sorghum noodles and other flour-coated dough) for 2 to 3 days. When the surface of the medicine turns green or off-white, pick it out and expose it to the sun. Turn it once every 2 hours. After drying, add bamboo radish and hang it on the Set aside in a dry place. When using, take out the koji medicine and grind it finely, sprinkle it into wine and rice and mix well. After fermentation, put it in a steamer to distill the wine. In addition to the specially prepared koji medicine, what is more important is the unique local water quality, geographical environment and climate conditions. After the greasy wine is aged for more than half a year in a pottery container, its taste becomes richer and sweeter.
