The development process of Tuwei wine

In the 1950s, Zhongshan Winery concentrated the brewing techniques of various Xiaolan wineries through a public-private partnership to re-brew Dawei wine. After the old, middle and young technical backbones of the winery improved the brewing process, the Tuwei wine produced is of high quality, more fragrant and unique in flavor than previous products. Even the wine glass that has been filled with Tuwei wine still has some residue after two or three days. Due to its fragrant aroma, Tuwei wine has become Xiaolan's best-selling specialty and is sold at home and abroad, becoming famous for a while. This is where the name "Xiaolan Dawei Wine" comes from. It specifically refers to the Dawei wine produced by Zhongshan Winery and brewed using the special technology of Zhongshan Winery. This distinguishes it from imitated products from other regions and manufacturers later.

Attachment (1) Xiaolan Tuwei Wine Inheritance Details Representative Industry Company Affiliated Brand Process Origin Time of Learning Production Experience Flower Source Status Remarks Mr. Chen Zhongci Winemaking Industry Zhongshan City Winery Tuwei Brand The winery trained people from Yongning for cooperative planting in 1971 and 42 years ago. It has preserved the formula and production records of Xiaolan Dawei wine and compiled "Zhongjiu Ji". Jucheng Winery is located in Xiaolan Dawei, Xiaolan Town, Zhongshan City. The wine is famous for its refreshing fragrance. Among the grades, the wine brewed from the flowers of the old tree is the most precious. It has the eight characteristics of "fragrance, honey, clearness, purity, cotton, smoothness, sweetness and mellowness".

Old tree twigs refer to twigs that are more than 30 years old. Its planting follows the ancient Xiaolan method, but there are many differences from modern large-scale planting. For example, when watering, grass is used to retain water, water filtered through sand and gravel is used for watering, and fragrant tea is poured on the flower roots when they bloom; When bending flowers, cut off weak branches so that the remaining strong branches should be kept three fingers apart to allow the flower buds to receive sufficient light; use the method of "eat less, eat more" for fertilization, and do not add water or fertilizer when the buds are blooming, etc. The flowers produced are more fragrant. To brew the best tea wine from old tree flowers, the craftsmanship is more exquisite than ordinary ones: if the flower picking time is before 9:30 in the morning, only flowers with an openness of 40-70 are taken; flowers on rainy days are not required ; Do not use flowers that have been open for too long and turn white; do not use flowers that are too small or deformed; use scissors to cut the petals, and do not use the white part under the petals... The purpose is to use the most fragrant and high-quality raw materials. The flowering period of Tuwei can reach its peak in the second year after planting, and its peak flowering period generally lasts for about 5-6 years. Flower farmers will replace new seedlings in batches according to actual conditions to maintain high yields. There are nearly 2 acres of old tamarisk trees still preserved in the Xiaolan area. They were planted in the late 1970s. The original planting land was Yongning Community. Later, due to changes in land functions, it was moved to a private park for special management. The other six fields with older trees were planted roughly around 2003, and are all located in Yongning Nature Reserve. Chen's wine-making notes "Tuwei Xianglu" contains a description of the old tree Wei:

There is a man in Xitou ① who is good at planting teaweed. The annual profit from selling seedlings is tens of thousands. One day, he suddenly called his father: "I have an old tree called Tuwei, and it will live to be over twenty. Do you want it?" My father was overjoyed and hurriedly gathered my brother and me to go with him. Weng planted an old tree with nine rows of weeds and strange shapes. Some are tall and straight, some are curved and graceful, some are lying about to rise, some are carved with holes and hollows, some are getting older and stronger. Then, the branches and leaves were removed, and the flowers were cut out, one foot and five feet straight, ready to be moved. Suddenly the weather changed, strong winds rose, cold lightning snaked, thunder exploded, and hail rain poured down. People are afraid and run and hide. When the rain stopped, I came out and saw that the clay bowls were almost empty, and three taels of iron roots were spread out, with a color like black lacquer. The streets were filled with mud, and the feet were bound in the mud. The naked plant was placed inside the basket, and moved out to Changdi Pond, where a net was set up to create a garden, to respect the falling clouds, soil and water, and to pray to the goddess of flowers and flowers. Yi Weng said that there were nine dogs and more than thirty chickens in the circle. Every time he is fed, the chickens fly and the dogs are happy, the noise is loud, the food is full, the food is comfortable, and the flowers and plants are flourishing. Ten years later, the net became rusty and had many holes. Uninvited people often entered through the holes, leaving flowers in a mess. If you are troubled, you will pour money into a high wall. From a distance, you will think you are wealthy, which will attract jealousy. There is an evil neighbor in the southeast of the garden, who is greedy and deceitful, and loves to cause trouble. In June, the district official ④ had just moved. Neighbors were quarreling with friends, and he was suing the official for taking over the village. The officials rose up in anger and ordered the walls to be demolished and the earth to be comforted. The father held on to the deed and fought hard. The officials are biased, misunderstandings about public and private matters, and want to break the contract and refuse to pay compensation. They are scoundrels. The father of Gu retreats and moves to Hua Thirty-two. Sad that the seasons are not in harmony, we all wither, and we are as sad as losing relatives and friends. At the end of the night, the cold moon cries with sorrow, which hurts the tradition and has no pity.

The way of heaven is right. My father was lucky enough to meet Bole, whom he trusted and entrusted with great trust.

Every time I meet with guests, I say: "Bo Le is a virtuous man who always cherishes the virtues of restoring tradition and is a fellow Taoist." With the blessing of Xianzi 6 and the shadow of Xun Dao 7, although everything is difficult, the wine will eventually come true. The brewed Xiaolan Tuwei wine is fragrant, honeyed, clear, pure, creamy, smooth, sweet and mellow. It is like nectar to everyone and is treasured. When it comes to wine, he laments: "The old tree is full of vines, but those who are not experts in the art will not understand its beauty." Ren Chendong's special note for December. ①: Xitoufang, located in Yongning Community, Xiaolan Town, Zhongshan City. ②: Inside Shengfeng Community. ③: The old custom of planting Tuwei. ④: District official, equivalent to the current community secretary. ⑤: A capable person with a keen eye and talent. ⑥: Fairy Tuwei. ⑦: Refers to Wu Ruilong, an official who went to Henan to patrol the road. According to legend, he was the first brewer of Xiaolan Dawei wine.

Appendix (2) Overview of Tuwei planting in Xiaolan Town in 2013: Life span of Tuwei planting Year and location Management method Planting proportion Remarks More than 30 years In the late 1970s, Shengfeng Community closed management was about 1.2 Moved from Yongning Communities, dedicated to brewing for 10 years. Around 2003, Yongning Community (there are 6 places). Open and managed about 11. For brewing and other. Yongning Community for less than 10 years from 2006 to 2013

Xinshi Community opened and managed about 87.8 for brewing. and other Xiaolan Dawei wine refers to the Dawei wine produced by Zhongshan Winery or brewed using the special technology of Zhongshan Winery. Since 1956, there are only two companies producing Xiaolan Dawei wine: Zhongshan Winery and Jucheng Winery. Zhongshan Distillery has exclusively used six distinctive packaging types in the production of Tuwei wine for nearly half a century. The existing ones include ordinary bottles, big-belly bottles, pig gall bottles and cups.

Ordinary bottles for Chinese wine were popular in the 1960s and 1970s. Due to the shortage of supplies, the same bottle type as other seasonings such as soy sauce was used.

In the 1970s and 1980s, Xiaolan Tuwei wine was exported in large quantities, so a big-bellied bottle was designed based on the historical data and legends of Tuwei fragrance. Its wine bottles are divided into two types: large and small. The design features are not much different, except for the color of the bottle cap and the trademark on the bottle cap. That is, the trademark for the large bottle is Zhujiang Bridge, and the trademark for the small bottle is Zhujiang Bridge. Large bottles are divided into two types: oral packaging and ordinary packaging. The glass bottles used by the two are made of the same material, but the wine labels for export bottles are more exquisite: the surface is waxy and the incisions are lint-free. The neck of the bottle is also tied with a ribbon (specially printed in Hong Kong). Later, the ribbon was removed and replaced with a "surface sticker".

In addition to the attractive appearance design, the Collection 94 does not seem to have any story roots at first glance. In fact, both the mouth of the bottle, the bottom of the bottle and the pattern have their origins. For details, please see the article "The Fragrance of Ertuwei. Collection of Xiaolan Dawei Wine 94".

The above products are brewed by Zhongshan Winery, and there are very few of them in existence today. Now available for collection is Xiaolan Dawei wine produced by Xiaolan Jucheng Winery.

Xiaolan Jucheng Winery used two bottle types during trial production in 2012. One is to follow the bottle design of the pig gall bottle, with improvements and additions to the bottle mouth, bottle stopper and some text descriptions. The size is larger than the 94 version, and the capacity is correspondingly increased to 400ml. The other is blue and white porcelain with a capacity of 500ml. The above two porcelain bottles are produced in Jingdezhen, Jiangxi. The Tawei wine produced by Jucheng Distillery in 2012 was a connoisseur version and was not sold on the market. Therefore, there is considerable room for appreciation.

To measure the quality of Xiaolan Dawei wine, in addition to the usual characteristics of liquor such as hanging cup and clarity, we can also measure the quality of Xiaolan Dawei wine from the following aspects: aroma, honey, clearness, purity, cotton, smoothness, sweetness, and mellowness. "To identify.

1. Fragrance intensity. Whether it is very obvious or light or hard to detect, we describe it as: high, medium, or low. The traditional Xiaolan Tuwei wine emphasizes its fragrant fragrance - "you can smell its fragrance from more than ten steps away". This is related to Tuwei’s history and cultural heritage for thousands of years. The fragrance of Tuwei flowers should be "live", that is, natural, fresh, vivid and comfortable. If you smell a turbid, lifeless aroma, it means that this is inferior wine or the raw materials used are not Tawei.

2. Sense of smell. High-quality Xiaolan Tuwei wine contains absolutely no other odors except the slightly honeyed fragrance unique to the Tuwei flower. This is different from the general Tawei wine that has a rice aroma or peculiar smell.

3. Appearance.

Inspect the clarity of the wine and identify whether there are impurities in the wine. Is it clear? Is it turbid? Still hazy? The high-quality Xiaolan Tuwei wine has a crystal clear body. If turbidity or floc appears, it is likely to be due to the following reasons: defects in the production process of Tuwei wine; bacterial infection during production and storage.

4. Sweetness. Tuwei wine produced before the 1990s has a strong sweetness. In the 21st century, in order to meet the requirements of health, Xiaolan Dawei wine is now mainly light and sweet.

5. Wine body. The body of the wine refers to the feeling and weight of the wine on the tongue. For example, Xiaolan Dawei wine with 38 degrees and 33 degrees has a mellow, smooth and thick feeling, which can best highlight the unique fragrance of Dawei.

6. Aftertaste. The length of time the fragrance lasts in the mouth after swallowing Tuwei wine. A long-lasting and pure floral fragrance is a characteristic of high-quality Tavern wine.

You can pay attention to a few points when collecting Xiaolan Tuwei wine:

1. Look for the trademark. Tuwei brand is the only trademark of Xiaolan Tuwei wine.

2. It is better if the wine bottle has the "Chrysanthemum" (Xiaolan Chrysanthemum Club) logo or the words "Internal Tasting", "Limited Edition", "Treasure", etc.

3. Pay attention to the year. Xiaolan is a sedimentary area with fertile soil, warm climate, and no major natural disasters all year round, making it especially suitable for the growth of rosettes. The flowers produced in Xiaolan are well-proportioned and have a fresh fragrance. High-quality flower sources are one of the main factors that determine the quality of Tuwei wine. The aroma of Tuwei wine depends on the growth of Tuwei flowers in that year. In addition to the three major factors of sunlight, moisture, and fertilizer, the quality of tea flowers also depends on the weather combination. The so-called good combination is that the temperature should be low during the period from branch pressing to budding, that is, there should be enough coldness, it is best not to rain between budding and budding, the temperature should not be hot and cold during the budding period, and there should be no thunderstorms during the flowering period. etc. For example, in 2011 and 2012, the flowers were in better condition, and it rarely rained when picking flowers, so the fragrance was abundant. Therefore, the Xiaolan Dawei wine produced in 2014 is worth collecting.

4. Pay attention to the country of origin. Xiaolan Town, Zhongshan City is the origin of Tuwei, which has been planted here for more than 400 years.

5. QS logo and manufacturer. So far, the only manufacturer that has obtained a safety production license related to Tuwei wine is Xiaolan Jucheng Winery.

6. Check whether the wine bottle is perfect, whether the outer packaging is damaged, whether the accessories are complete, etc. Such as porcelain bottles, whether the wine bottle has trachoma, whether the bottle mouth seal is firm, etc., these are things that collectors cannot ignore.

Attention should be paid to long-term storage:

1. The temperature of the storage environment is best maintained at around 10 degrees to 25 degrees.

2. The wine storage environment should not be too humid. The ideal humidity is 75-80.

3. Store in a cool and ventilated place, away from sunlight. It is best to maintain ventilation, and do not place anything with a strong smell in the same environment to avoid destroying the taste of the wine.

4. It is ideal to place the wine bottle upright, so that there is space between the bottle cap and the wine, which is conducive to aging.

5. If you smell the fragrance of flowers, it means there is air leakage. Check and seal in time to prevent qualitative changes.

Excerpted from "The Fragrance of Tea Wine" In 2006, with the encouragement of the government, the planting area of ??tea wine in Xiaolan increased year by year. Major growers and enthusiasts brewed their own tea wine based on their understanding of the wine. In just five years, six different styles of Tuwei wine have appeared in the Xiaolan wine consumer market.
