During the Tianqi period of the Ming Dynasty, some soy sauce shops appeared in Huimin City (then the administrative center of Wuding Prefecture). Later, eight famous business names including "Xianquanju", "Wuxiangzhai" and "Datong" continued. During the Kangxi, Yongzheng and Qianlong dynasties of the Qing Dynasty, the products of Xianquanju Sauce Garden were paid tribute to the imperial court many times. Because Huimin City is the administrative seat of Wuding Prefecture, it is named after "Wuding Prefecture Pickles". During the War to Resist US Aggression and Aid Korea, Wudingfu pickles were shipped to North Korea in batches as condolences and were praised by Chinese and North Korean officers and soldiers. The traditional pickles varieties of Wuding Prefecture mainly include more than 30 types of pickles, such as ground eggplant, melon baguette, sugar bag, pickled peach kernel, almond, crystal lettuce, pickled cucumber, soy peanut kernel, Hejincai, pickled ground ring, tiger skin vegetable, and Baigongpi. kind. The reason why Wudingfu pickles have long been famous is that they have the characteristics of freshness, sweetness, crispness and tenderness and the outstanding style of color, aroma, taste and body among similar products. After the founding of the People's Republic of China, the Huimin County Pickle Factory was established. After 1978, the Huimin County Pickle Factory restored the time-honored brand name "Xianquanju", and the Huimin Town Pickle Factory also reused the trade name "Yuanxiangzhai". In 1997, while exploring traditional varieties and sorting out traditional recipes and techniques, the two factories also developed new varieties such as two kernels with sauce, three kinds of sauce, multi-flavor spicy vegetables, asparagus with sauce, mushrooms with sauce, etc., making Wudingfu pickles a sweet and sour variety. There are more than 50 varieties in 4 series including categories, sauces, pickles and soy products. In 2000, the output was 3,000 tons, 300 times that before the founding of the People's Republic of China. In 1988, Wudingfu pickles won the bronze medal at the first national food expo. Since 1994, Wudingfu series of pickles have been rated as "Shandong Traditional Famous Special Food" and "Shandong Market Best-Selling Product".
