Kweichow Moutai, which enjoys a good reputation at home and abroad, is a leader among China wines and is known as "national wine". It ranks as one of the three largest distilled spirits in the world along with cognac in France and scotch whisky in England. Maotai liquor is produced in Maotai Town, northern Guizhou Province, and the liquor is also named after this place. Maotai Town is adjacent to Chishui River, and its history can be traced back to Shang Dynasty. This is a ghost territory. Its title has been changed repeatedly. It was originally called Masang Bay, and later it was called Sifang Well. In the Song Dynasty, a thatched terrace, referred to as Maotai for short, was officially named Maotai Village after the Yuan Dynasty, and later renamed Banbianqiao, Yungu Town and Shang Yi Town. The production technology of Moutai is unique. In the long-term production practice, the local working people skillfully combined the unique natural conditions such as climate, water quality and soil with the traditional brewing technology in China, and created a set of brewing technology completely different from other famous wines in China. The liquid crystal of Maotai liquor is bright and transparent, containing 53% alcohol, which is 7- 12 degrees lower than other famous wines. Its style is characterized by outstanding sound and fragrance, full and delicate fragrance, fragrant but not bright, elegant and pleasant, full-bodied, soft and rich, low but not light alcohol content, long aftertaste after drinking. There are many predecessors' praises: "flowers are full of surprises", "the wind comes next door and thousands of people are drunk, and the rain is over ten miles". When you open Moutai, you will smell an elegant fragrance, and then you will smell a sauce flavor similar to bean fermentation and a sweet smell of roasting. Take a sip, it is elegant, sweet and mellow, and it will linger in your mouth. After drinking an empty cup, there is still the elegant fragrance of vanillin and rose, which will not disappear for five to seven days, so it is called empty cup fragrance. If the first smell is called qianxiang and the second smell is called "empty cup fragrance", the former fragrance is elegant and attractive, and the latter fragrance is exquisite and lasting, which is intriguing. Before and after the fragrance complement each other, seamless, outstanding and unique.
