How to make moon cakes
1. First make the cake crust. Mix the syrup, peanut oil, yam water and custard powder (if there is any, don’t add it if you don’t have it, it doesn’t matter) and mix well.
2. Add the flour. You don’t need to sift it. Just add it directly. Chinese snacks are not particular about this aspect.
3. Then use a spatula or scraper to mix evenly from bottom to top. It's quite easy to operate, and you can reach the state as shown on the right in a short time.
4. Wrap in plastic wrap and set aside to relax for at least 2 hours. It is best not to refrigerate the refrigerated pie crust, even if it is warmed up before handling, it will feel a little sticky. It just relaxes at room temperature, and the longer it relaxes, the less sticky it becomes.
5. Next divide the fillings. Since the egg yolk needs to be wrapped, according to the ratio of skin filling to 3:7, the filling part is 35g, so egg yolk + white lotus paste = 35g is enough, and then wrap the egg yolk with lotus paste. Cover the divided fillings with plastic wrap and set aside.
6. It takes a long time to divide the fillings, because they need to be accurately weighed and then wrapped one by one. By doing this, it's almost time for the crust to relax. Divide the pie crust into 15g pieces, cover with plastic wrap and set aside.
7. Then take the pie crust and flatten the middle part with your thumb.
8. Then add a portion of the fillings, and use the tiger’s mouth to slowly push up the pie crust.
9. Then close the mouth, and slowly push it up to close the mouth, similar to the feeling of making glutinous rice balls. In fact, it's not difficult. It feels even easier than making glutinous rice balls. Because the crust is quite oily and not sticky, it is easy to recommend. You will know after trying it. This crust recipe is really good.
10. There is no need to sprinkle powder to prevent sticking, just press the pattern into the mooncake mold. You can brush a thin layer of oil around the flower pieces and mold in advance. In fact, it doesn't feel sticky without brushing. Hey, some of the yolks are quite big, and half of them are still exposed.
11. After pressing each one, you can bake it. No need to spray water because there is no powder coating to prevent sticking. Bake at 200℃ for 5 minutes to set.
12. Then take it out and brush the surface with egg yolk liquid. The picture below shows it before brushing. I forgot to take a picture after brushing. Don't be greedy when brushing the egg yolk liquid. In fact, the egg yolk liquid given is more than enough to make 150 mooncakes, so everyone should know that the egg liquid you get for each mooncake is very, very little! After the brush is dipped in egg liquid, press it against the edge of the bowl to force out the excess egg liquid, and then brush it onto the surface of the mooncake. This way the pattern will be clear!
13. Continue to bake in the preheated oven (Hais C45, set the temperature according to the temperament of your own oven) at 180°C for 15 minutes.
14. If you see a bulging feeling around the mooncake, and the surface is colored, it means it is baked.
