Local legend has it that it has been around since Tang Dynasty King Li Shimin. Legend has it that it was once the food of Zhaoling migrant workers. It can be eaten after soaking in boiling water, similar to today's instant noodles. Li Shimin once came to the foot of Jiuwei Mountain for an inspection. Local officials specially invited him to eat braised noodles. He was praised, and braised noodles became popular. People in Liquan generally like to eat baked noodles, and treat guests to dinner for weddings and weddings, including morning soup and lunch. The morning soup is fried noodles, which are usually cut into noodles and eaten with sauteed seeds. When cutting, a special knife is required. It was originally a guillotine. The upper part was removed, sandwiched between two wooden boards, and the handle was installed. Without considerable skill and strength, I cannot use this knife and cannot cut the noodles well. Saozi is made from fat and lean pork, diced and dried. The method of making soup is: boil water, add seasonings in the order of one salt, two vinegar and three spicy seeds. The spicy paste is poured with large oil; then add meat dumplings, dried shrimps, yellow flowers, fungus and other dishes. Add some cabbage, minced leeks, chopped green onions, garlic slices, etc., make sure they are raw and not cooked.
In addition to Liquan, several counties such as Xingping and Yongshou also have baked noodles. It is both store food and home food. They all look like pancakes, but they are not pancakes. It has the characteristics of softness and toughness, and highlights the sour and spicy aroma.
Remarks: The registered trademarks are Zhaoling Noodles and Mozhang Noodles. Zhaoling Noodles is right next to the original elderly activity center. It used to be a steamed bun restaurant run by a Muslim family, just two doors away. We arrived at the stations of Zhaoling, Jianling, and Chigan; Mozhang Noodles is in the southwest corner, not far from the Liquan County Public Security Bureau.
