Suer cake
A traditional tea in Fuan Town, Dongtai.
According to legend, Emperor Qianlong was full of praise after tasting it in Jiangnan. For a time, shortbread became famous and even became the pride of Fuan people. Crispy cakes are made of flour, kneaded into dough, wrapped with red bean stuffing and finally fried. Because the shortbread is crisp from the inside out, it looks like a slightly open Jin Ju at first glance, so it is also called "thousand-layer shortbread". In addition to the sweet stuffing made of red bean paste, sweet-scented osmanthus and sucrose, shortbread can also be wrapped with salty stuffing made of fresh meat, chopped green onion, salt and monosodium glutamate, which is crispy in the mouth and more fragrant when chewed. In local words, it means "I can't bear to throw it away when I eat."
