Hillbilly eggs are not a specialty of Yunnan, or even a brand. Because "countryman" is a derogatory term. Trademark registration is not allowed. So now the salted eggs in country bars are processed by many coolies. Its quality index cannot be guaranteed.

The only local salted egg brand in Yunnan is "Dongdongxiang Salted Egg" produced by Kunming Dongdong Food Co., Ltd., which we locals like very much. It tastes good and the quality is guaranteed.

The fly in the ointment is that the prices of all products of Kunming Dongdong Food Company are much higher. For example, the retail price of an egg is about 10 to 30 cents higher than that of a country bumpkin.
