Speaking of Shanghai’s famous traditional dishes, the Little Shaoxing Chicken Porridge restaurant is located near Yunnan South Road and Ninghai East Road in Shanghai. It is a chicken restaurant that is famous both at home and abroad. Its cooked chicken is beautiful in appearance. The skin is yellow and the flesh is white, tender and delicious, very delicious. In 1958, Shao Shaoxing White Chicken Porridge was rated as a national high-quality Shaoxing chicken porridge restaurant. This store was founded by a Shaoxing native in 1947.

Because its founders (Zhang Runniu brother and sister, among whom Zhang Ruhua was dissatisfied with the Little Shaoxing-themed TV broadcast at the time, he opened another King of Kings chicken porridge restaurant) and its main operators are local Shaoxing people, it has formed a A little Shaoxing world, so people named it Little Shaoxing Chicken Porridge Restaurant. Shaoxing chicken porridge is a kind of rice porridge cooked with chicken soup. It is a snack made with chicken and various condiments. When eating chicken porridge, cut the cooked chicken into 3 cm long and 0.6 cm wide pieces, put them on a plate, put the chicken porridge in a bowl, add green onions, minced ginger and chicken oil, and eat together. At this time, the chicken porridge is yellow and green, and the chicken is white and shiny, which is pleasing to the eye and greatly increases appetite. When you taste it, the chicken porridge is sticky, tough and delicious, tender and refreshing, rich in nutrients, and the more you eat, the more delicious it becomes. This food is operated by Xiao Shaoxing Chicken Porridge Shop in Shanghai.

History of development

Propping up the facade

The Little Shaoxing Chicken Porridge Shop is located in the Great World on the east side of Yunnan Road. It has been established for decades and its founders are Zhang Runniu and Zhang Ruhua. They once told about Little Shaoxing.

Little Shaoxing was called out by the customer. Zhang Runniu, a stall owner of a porridge shop, and his sister Zhang Ruhua fled from Ma to Shanghai, where they lived near Xixinqiao (i.e. Yunnan South Road) in Anzhangjia Village, Shaoxing, Zhejiang Province. It was the spring of 1940. They were forced to make a living and ordered some chicken heads, duck feet, and wings. After cooking, they carried baskets and hawked on the street. The brother and sister saved some money by saving money. In 1946, they set up a stall with two benches and three wooden boards in the alley under the teahouse at No. 61 Yunnan South Road, selling some wontons, chicken heads, duck feet, and pork ribs noodles. For a time, various food stalls gathered in this area. Although Zhang's brothers and sisters shouted loudly, there were still few customers. So it was changed to a chicken porridge stall, but business was also sluggish. Brother and sister Zhang were depressed and sighed, worrying about their livelihood.

One day when Zhang Runniu and Zhang Ruhua were talking about a way out, they suddenly remembered that when they were children, they heard the old man say that the Yue chicken produced in Shaoxing had been paid tribute to Emperor Renzong of the Qing Dynasty. It is said that there are several farmers living in a mountain village surrounded by mountains in Shaoxing. They raise a lot of chickens every year and put the chickens on the mountain to forage every morning. These chickens grew up on their own wild food. They are particularly fat and tender, and taste delicious after being cooked. After the emperor tasted it, he liked it very much. From then on, they were invited to pay tribute every year and were called Cantonese chickens. Inspired by this legend, Zhang Runniu began to use chickens raised by rural people as raw materials. After such changes, the taste of chicken porridge is really extraordinary. Some chicken porridge restaurants in Zhang Tang don't know the secret, so their business is not as good as Zhang's brother and sister. At that time, some well-known actors in the literary and art circles, such as Zhou, Wang Shaolou, Zhao Dan, etc. Finally, we came to the chicken porridge stall of Brother and Sister Zhang for a late-night snack and became a regular customer. Because Brother Zhang’s chicken porridge stall does not have a signboard, and stall owner Zhang Runniu has a Shaoxing accent and is small, some regular customers have called him Little Shaoxing for a long time.

Tips of doing business

Although the business of the chicken porridge stall is much better than before, because the chicken is killed and cooked the next day, the chicken has no flavor. It's so fresh, and it takes two or three days to sell a chicken every time. Zhang, his brother and sister are very worried about this. One day, comedy singer Yang Huasheng had just left after dinner, and his brother and sister were whispering again. Zhang Ruhua said that Yang Watson is famous for playing "a Chinese". Living Bodhisattva, his brother is preoccupied with business. Suddenly, Zhang Runniu mistook the living Bodhisattva and killed him on the spot, which made it difficult to set up a chicken porridge stall in the old Shanghai of Shili Yangchang! Usually, hoodlums frequented the place, and if they were even remotely disrespectful, they would get into trouble. The autumn wind is bleak, and when Yangcheng Lake Qingshui hairy crabs are on the market, the chicken porridge business will be taken away by the crab market. Coupled with the poor cold protection conditions at the entrance of the alley, customers will naturally move to the crab market. Although little Shaoxing was talented, his elder brothers and sisters were always worried and suffered for several years.

Shaoxing Tips

Shanghai people generally like three-yellow chicken, but in Xiaoshaoxing, the three-yellow chicken is not yellow with hair, fur and claws, but yellow with hair, claws and skin. There are even three yellow chickens, but when they arrive in Xiao Shaoxing, not all are available.

They strictly control: chickens raised by farmers mainly enter Shaoxing, Yuyao, and Nanhui counties; there are also free-range chickens; roosters should be of the same year, and hens should be of the following year; hens must weigh more than four kilograms, and roosters must weigh more than Four and a half pounds. If the supply of goods is small, it is better to do less business to avoid being downgraded.

Little Shaoxing also practiced looking, catching, touching, blowing, and listening on the choice of chickens: just by looking at it, you can know where the chicken came from, whether it was raised in captivity or free-range; catching means catching If you touch a chicken, you will know how much it weighs; if you touch it, you will know whether the meat of the chicken is old or tender; if you blow, you will use a tapir to blow the feathers of the chicken, you will know the skin color and breed of the chicken; if you listen, you will hear the chicken cry. field, you will know the health status of the chicken's internal organs. Then this is not enough. The selected chickens admitted by Xiao Shaoxing will not be killed immediately after entering the store, but will be kept in captivity for a day or two. Zhang Ruhua will carefully observe the chicken's flexibility before deciding the order of slaughter.

After liberation, the chicken porridge business became bigger and bigger in Shaoxing. At most, 20 chickens could be sold a day. After three years of natural disasters and ten years of turmoil during the Cultural Revolution, Little Shaoxing was forced to close down due to lack of chicken resources. On June 28, 1979, Little Shaoxing was re-listed to the commercial list. Zhang Ruhua is the store manager and Zhang Runniu is the cooking technician. After several years of hard work, they have summed up a set of rich experience in chicken selection, chicken killing, cooking, chicken cutting and other operating techniques, and have new developments in Xiaoshaoxing.

The deliciousness is the best in the world.

Some overseas Chinese and foreign guests often come to enjoy the small Shaoxing and live chickens. First, the customer picks his or her favorite chicken from the chicken coop, then the shop owner grabs it from the chicken coop and performs it on the spot. Forty or fifty minutes ago, it was still a lively chicken. After forty or fifty minutes, it turned into a bowl of yellow and white cut chicken, which tempts the appetite. This legendary mode of operation has aroused people’s interest. Once, a Japanese friend took photos of the entire process of their surgery and planned to take it back to Japan to study.

Little Shaoxing has a unique skill in killing chickens, washing their feathers, cooking, and chopping seasonings. A chicken-killing knife with a mouth as small as a soybean; the blood of the chicken must be drained to ensure that the skin is white; removing the internal organs will not affect the integrity of the chicken's appearance; when the chicken is scalded and plucking, the chicken skin is slightly damaged; when cooking, First put the chicken into boiling water, move it up and down, boil it repeatedly for a while, then put it into sand filtered water to cool and shape, just like quenching metal. When the hot chicken comes into contact with cold water, its skin suddenly shrinks, then put it into boiling water, add a little cold water, simmer over a slow fire, take it out to cool, and then apply sesame oil on the chicken, it will turn light yellow and shiny. Use unique knife skills to cut the chicken into pieces. When eating, add special condiments according to the recipe, and it tastes delicious. Some people compare Shanghai’s boiled chicken to Quanjude’s roast duck in Little Shaoxing

Little Shaoxing’s chicken porridge shop is always packed. Even though it is the peak season for hairy crabs, it is still full of customers and business is increasing. In 1985, White Cut Chicken Xiao Shaoxing was rated as a traditional high-quality product by the Ministry of Commerce and was rated as a thumb brand trademark.

Doing a small business

The stunt of Little Shaoxing is regarded as the basis, but it also has the popularization of traditional management principles. For example, the cheap and good-quality chicken porridge is made from high-quality white japonica rice, cooked in original chicken broth, and seasoned with a spoonful of special sauce. It tastes great. Chicken heads, chicken feet, and chicken wings can be purchased at will. Although the profit is small, the profit is small but the turnover is fast. In 1983, an average of about 200 chickens were sold per day.

With the improvement of people's living standards, more and more people want to try white-cut chicken and delicious chicken porridge Xiao Shaoxing. At the beginning and middle of each month, many employees will make a special trip to visit after they receive their wages. The hutong, which is only 50 square meters, is crowded with people, but even on rainy days, customers stand in the alley holding umbrellas and drink a bowl of chicken porridge. In 1985, relevant departments allocated special funds to expand and renovate the store, giving it a completely new look. At the same time, a small Shaoxing store opened at the intersection of Beijing Road and Tibet Road. As a result, Little Shaoxing is becoming more and more prosperous, with an average of 400 chickens sold every day. This rare chicken Xiao Shaoxing is very popular among customers.
