In the late Qing Dynasty, Xiao Youbai, a descendant of upright officials, lived in Xingningli, Shiqi, Xiangshan County, Guangdong. One year, Xiao Youbai was going to hold a birthday party for his mother. Xiao Youbai, whose family was in decline, was worried about how to entertain the guests. At this time, Pan Yanxiang, a maid from Shunde, proposed to use homemade mung bean cakes to entertain guests. Pan Yanxiang ground mung beans into powder cake, sandwiched a thin piece of sugar-marinated pork in the middle of the cake, and baked it to make a fragrant mung bean cake. This mung bean cake is extremely crispy and has the aroma of almonds. Everyone was full of praise.
After that, Xiao Youbai ordered Pan Yanxiang and his concubine Aunt Lin to make this cake as a gift to relatives and friends, and gave it to the magistrate of Xiangshan County for tasting. After eating the cake, Qin Shousu, the county magistrate at that time, had endless aftertaste and immediately wrote the inscription "The teeth and cheeks will remain fragrant". After the success of the Revolution of 1911 in 1911, the Taidong Theater under Shiqi Temple in Xiangshan County opened. In order to support the family, Xiao Youbai took the opportunity to order the whole family to bake almond cakes, and asked the maid to sell them in front of the theater. Because of the unique flavor of the cake, some customers came up to ask about the origin of the cake, but the maid did not dare to tell the truth and only said that it was bought and sold. Some customers even waited for the maid to finish selling the cakes, then followed her home and pushed in to buy the cakes. Finally one day, someone took advantage of the Xiao family's unpreparedness and rushed into the courtyard. They saw the sound of banging cakes coming from the workshop in the back seat, and the aroma of baking cakes filled the front hall, so the truth behind the Xiao family's cake making was revealed. exposure. At that time, Tsui Heung Yuen almond cakes were made using wooden molds. The shape of the almonds was prone to missing corners, which affected the appearance. Therefore, the mold was changed to a round shape, which remains the same today, and the word "mouth" is also used. There were too many strokes, the cake mold was difficult to carve and the texture was complicated. Xiao Youbai's brother, the Juren Xiao Cexun, simplified the word "mouth" to the word "zu", and based on the characteristics of traditional folk cake names that all have the character "Garden", he named it "Chui Xiang". garden". In 1918, the Republic of China began to impose taxes on industry and commerce. Zuixiangyuan also officially registered with industry and commerce, received a business license, and registered the trademark "Meihe Brand". After the launch of Zuixiangyuan almond cake, the supply exceeded the demand, which was especially attractive to overseas Chinese. Some merchants asked for wholesale sales to other places, but the Xiao family refused to ensure their credibility and only forwarded the goods to other places for delivery through "Jinshanzhuang" in Hong Kong. In 1930, Xiao Youbai’s son inherited his father’s business and ran the Tsui Heung Yuen Bakery until the founding of the People’s Republic of China. In 1935, at the Honolulu International Food Expo in the United States, Zuxiangyuan almond cake won the Golden Rooster Award. In 1956, Tsui Heung Yuen Bakery merged with more than 20 local bakery stores to establish Tsui Heung Yuen Candy and Cake Shop Processing Plant. The production site was expanded and output increased. Since then, Zuixiang Garden has evolved from private to state-owned, and from a workshop to an enterprise. In order to increase the production of almond cakes in Zuixiangyuan, the state-owned factory once bought a cake beating machine. However, the cakes produced were hard and unpalatable, so they had to be abandoned and the machine was sold as scrap metal.
