In the eyes of Shaowu people, the melodious hawking and the bursts of fragrance penetrate into the heart and then slowly disappear in the air. It is an indescribable feeling of comfort, especially for Shaowu people who have recently returned from abroad. They are most attracted to it and regard it as the best taste of their hometown. Zuzhang Ci is made by mixing fine japonica rice and indica rice in a certain proportion. After soaking, grind it into rice slurry and put it into a hot pot, stir until it is semi-cooked and serve. During the mixing process, an appropriate amount of naturally occurring alkaline water should be poured in while stirring for the purpose of making foot glutinous rice cakes. Then roll the half-cooked rice paste dough into strips, cut it into half-centimeter-thick round cakes with a knife, and shape it into thin slices with an upturned periphery and a concave center, as if it were squeezed with the sole of your foot. Then stack 5 to 6 thin slices, put them in a basket and steam them over high heat. When steaming, rice noodles made from pork belly are placed on top of the rice dumplings. Without the rice noodles and meat steamed on top, the foot cake is a bit jerky, lacking the round texture, and lacks the moist luster in color. When they come out of the cage, the paws of the glutinous rice cakes are shiny, and you can smell the freshness from a distance, which makes you appetite. Eating foot cakes with rice noodles and meat is a perfect combination. The moisture of the meat during the steaming process removes the astringency of the rice and adds to the taste. 2. Nezha Ci. Nezha Ci, also known as "Bao Ci", looks like a dumpling. The filling is not made of flour, but made of rice and "water koji". The specific method of making Nezha rice is: first mix and soak japonica rice and indica rice in a certain proportion, add an appropriate amount of "water koji" and grind it into a pulp. After grinding the pulp, put it into the pot and cook it until it is half cooked. Then take it out of the pot and knead it on the chopping board until it has a uniform texture. Rice dumplings are then divided into millet dough balls about the size of half a quail egg, kneaded into thin skins, wrapped with stuffing, steamed in a basket, and then eaten, so some people call them "rice dumplings". The stuffing of Nezha glutinous rice cakes on Spring Society is very particular. The so-called "Chun Society" is a traditional Chinese folk festival, which is the fifth day after the beginning of spring. On this day, every household in Shaowu City, especially in the rural areas of Shaonan, uses high-quality winter bamboo shoots, bacon, smoked dried tofu, taro, shiitake mushrooms, garlic, etc. as fillings. The steamed Nezha Ci is oily but not greasy, and your mouth is full of raw food after one bite. Fragrant and appetizing. Nezha Ci is not only delicious and jasper-like in color, but it can also be used as a medicinal meal. This is mainly because the rice milk contains "water koji". The scientific name of water koji is "rat koji". It is sweet and non-toxic, strengthens the spleen and balances the heart, eliminates phlegm and relieves cough, and can treat chronic bronchitis. In addition, Nezha Ci also has the function of protecting the ecology: it is said that bamboo shoots called "spring bamboo shoots" cannot be dug randomly, while bamboo shoots before "She Day" are called "winter bamboo shoots", and ordinary people can dig them. Spring Society eats Nezha Ci. , virtually protecting the growth and reproduction of moso bamboo. The custom of eating Nezha Ci has been continued for hundreds of years, and Nezha Ci has gradually become known as Shaowu's unique traditional folk snack. 2. Shiitake mushrooms. In 1990, the city's shiitake mushroom (dry product, the same below) output was 103 tons. Since then, the cultivation technology has evolved from artificially inoculated segment wood cultivation to plastic bag cultivation, and the yield of shiitake mushrooms has increased significantly. In 1999, the city's mushroom output reached 1,373 tons, an increase of more than 12 times compared with 1990.
Since 1999, the raw material for cultivating shiitake mushrooms has been changed from pure sawdust to a mixture of sawdust and cotton seeds. 3. Russula. Shaowu specialty. In the past, all townships (towns) produced it, and the products from Jinkeng Township were the best. Russula russula naturally grows wild in broad-leaf forests. As the area of ??broad-leaf forests continues to decrease, the output of russula russula has declined year by year, making russula russula a rare and valuable product. In 1990, the city's dried russula output was 9 tons. The main production area of ??Shaowu Russula is Aishang Village, Jinkeng Township, with an annual output of about 1,000 kilograms of dried Russula. Golden pit russula is divided into two types: reed mushroom and rice flower mushroom according to different growing seasons. In addition, Jinkeng Village and Chongxia Village in Jinkeng Township and individual mountain villages in Guilin Township and Zhangcuo Township also produce small amounts of red mushrooms. In 2005, the city produced about 2 tons of dried red mushrooms.
4. Broken copper tea. It is the first of the "Three Wonders of Heping" and is produced in Kanxia Village and Pingshang Village, Heping Town, at an altitude of 1,414 meters at Guanxing Peak and Liuxianfeng Mountains. This place is far away from industrial areas, the soil and climate are not polluted, and it is purely pollution-free green quality tea. The amino acids in broken copper tea are 2 times higher than the local ordinary tea, and the tea polyphenols are 3 times higher. This tea has the effects of dispelling wind and clearing heat, relieving heat and eliminating qi, cooling blood and moisturizing the liver, quenching thirst and promoting fluid production. Just put a handful into your mouth and chew it for a while, then take a copper coin and chew it together for a minute or two. You can see small shiny copper pieces in the tea leaves, so it is called "broken copper tea".
5. Peaceful travel milk tofu. Hepingyoujiang Tofu has a long history, and its preparation method has been passed down from generation to generation. To make swimming tofu, you don't need to gather gypsum or brine, but use aged soy milk as yeast. Pour the cooked soy milk into the wood, add an appropriate amount of fermented and sour mother milk according to the proportion, and then slowly swim until the soy milk condenses. After forming into pieces, cover the wood tightly for a while, and the tofu will settle and separate from the slurry water. Then scoop up the tofu and divide it into several plates. After pressing dry, it becomes the slurry water tofu. After the swimming water tofu is processed into edible oil and fried, it becomes fried tofu. Youjiang Tofu is pure, tender and delicious. It is a special delicacy that tourists must try first when visiting Heping Ancient Town. Youjiang tofu can be made into various famous dishes and snacks with different ingredients, among which loach tofu soup can especially reflect the characteristics of peace.
6. Peaceful carp. Heping farmers mainly grow single-crop rice. The ancestors of Heping farmers have always had the habit of raising fish in rice fields and doing both rice and fish. When farmers need to irrigate rice during the growing period, they put carp fry in the fields, and then add some rapeseed cakes, pig manure, etc. as nutrients. When the rice is about to mature and the fields need to be drained and roasted, carp can be caught, each weighing about half a catty. The cooked carp has tender meat, sweet taste and a delicious aftertaste.
7. Camellia oleifera. In 1990, the city produced 489 tons of camellia seeds. Except for Jinkeng Township, all other townships (towns) and streets produce camellia seeds, among which six townships (towns) of Nakou, Weimin, Hongdun, Chengjiao, Dabugang and Shuibei are the main production areas. At the end of 1996, the city's Camellia oleifera forest area was 1,040 hectares, of which Hongdun, Weimin and Shuibei towns owned more than 100 hectares. Hongdun Town has 348 hectares, accounting for one-third of the total camellia oleifera forest area. In the same year, the total output of camellia seeds reached 1,162 tons. As of 2005, the city's Camellia oleifera forest area was 367 hectares, mainly distributed in 5 towns: Hongdun, Weimin, Shuibei, Nakou and Dabugang, of which 108 hectares were in Hongdun Town. The city produces 432 tons of Camellia oleifera seeds.
8. Rosin. In 1990, the city's rosin output was 2,758 tons. Due to the reduction in pine forest area, rosin production has declined year by year. By 1999, the city's rosin production had dropped to about 1,000 tons. In 2001, rosin production dropped to less than 1,000 tons. Since 2002, the annual production of rosin has increased to more than 1,000 tons. In 2005, the city's rosin output was 1,343 tons. From 1990 to 2005, the city's total rosin production reached 24,214 tons.
9. Chinese medicinal materials. The alpine zone in Shaowu City has a cold climate and well-maintained forest vegetation, which is suitable for the growth of various wild Chinese medicinal materials. There are mainly wild Chinese medicinal materials such as Anomatis, Echinacea, Jiujiefeng, Plantain, Honeysuckle, Yellow Gardenia, White Hair Vine, Aesculus aesculata, Mountain Centipede and so on. Among them, the market price of Anomatis sp. produced in Jinkeng Township is 200 yuan per kilogram.
