Summing up the experience of failure, you must look at:
1. Why is the dry powder in the finished product not ripe?
Water and flour are not evenly mixed, and insufficient kneading leads to no moisture absorption of rice flour.
The sieving time is too long, especially in winter, the dry water evaporates quickly.
There is no hollow and breathable container to block the rise of water vapor.
The drawer cloth must be breathable, and the gauze in the special secret room cannot be used.
2. Why does the paste on the surface or bottom of the finished product collapse?
You must cover the container when steaming the cake. If there is no cover, you can put wet gauze on it, or put chopsticks on the container and buckle the plate.
Don't have too much water in the pot when steaming the cake. It may overflow into the cake after boiling. It is recommended to reach half a pot.
It was not taken out immediately after steaming, which caused the water droplets gathered on the lid to enter the cake.
3. Why is the finished product particularly strong and not fluffy?
Do not press the sieved powder by hand, and keep it fluffy.
After the powder is put into the container, it must be gently scraped flat, and it should be light when placed in the middle interlayer, and it should not be pressed down hard. If the sandwich contains thick ingredients such as bean paste, you can roll it flat and cut it in advance before gently putting it in.
If the steaming time is not enough, the bigger the cake, the longer it will take.
