Pear paste candies are divided into Benbang (Shanghai), Subang, Hangzhou and Yangbang, and the pear candies in the Old Town God’s Temple are all from the Benbang. In 1854, the fourth year of Xianfeng reign in the Qing Dynasty, a pear paste candy store with the name "Yongshengtang" was opened next to Qingxue Square at the west end of the Old Town God's Temple. In the 30th year of the reign of Emperor Guangxu of the Qing Dynasty (1904), another "Deshengtang" was opened north of the Old Town God's Temple, specializing in selling pear candy.
The earliest pear candy seller in the history of Shanghai was the "Zhupinzhai" in the Chenghuang Temple, which was founded in the fifth year of Chengfeng in the Qing Dynasty. It is said that the Zhu family has a secret recipe handed down from their ancestors, and the ingredients are authentic and carefully prepared. Therefore, the business of "Zhu Pinzhai" has been very prosperous since the establishment of "Zhu Pinzhai", and its pear paste candy and medicinal pear paste are very popular among the public. At first, Mrs. Zhu was in charge of "Zhu Pin Zhai". She could judge the condition of customers based on their coughs, prescribe the right medicine, and distribute pear candy. Later, the "Zhu Pinzhai" business was taken over by her son Zhu Cixing, and the "Zhu Laotai" trademark was registered. In order to cater to the needs of Shanghai's metropolitan consumers at that time, Zhu Cixing began to research exclusive high-grade pear candy. In addition to antitussive and phlegm-reducing ingredients, this kind of pear paste candy also contains valuable supplements such as ginseng, velvet antler, cinnamon, schisandra chinensis, acanthopanax, and ganoderma lucidum. It has been widely praised as soon as it was launched. He also accepts customization. Each dose is made of 25 kilograms. It is mainly custom-made. He specializes in serving the mansion. He can prescribe the right medicine, contact by phone, and deliver it to your door. It can also be given as a gift. At that time, famous Peking Opera artists such as Qiu Shengrong and Li Muliang loved to eat pear paste candies from "Zhupinzhai". They bought more than a dozen boxes at a time and became regular customers of "Zhupinzhai", turning pear paste candies and medicinal pear paste into high-end foods that integrate gifts, leisure and medical treatment.
The pear candy store with the most unique characteristics of our gang was the "Yongshengtang" pear candy store in Qingxue Square of the Old Town God's Temple. It was founded in the eighth year of Guangxu's reign in the Qing Dynasty. "Yongshengtang" sells all kinds of pear paste candies, and the shop owner Zhang Yinkui and his son also pioneered the method of selling candies that are made and sold now. The jargon is called "Zuo Mu", also known as "Wenmai". They put a charcoal stove in front of the sugar stall, and placed a large copper pot for boiling pear paste sugar on the stove. The sugar seller held a long bamboo pole in his left hand and constantly stirred the copper pot to make the sugar in the pot non-stick. At the bottom, hold a ruler in your right hand and use a long flat iron to beat the medicinal ingredients into powder. Pile them in piles in a small wooden plate. When the sugar in the pot boils to a certain level, add the powder to the pot. Pour into the pot, stir and boil to make medicinal pear paste sugar.
There is also a famous pear paste candy shop located in the "Deshengtang" north of the Old Town God's Temple. It was founded in the 30th year of Guangxu's reign in the Qing Dynasty. The owner, Cao Derong, was originally an apprentice of "Yongsheng Tang". Later he opened his own shop. In order to remember the grace of "Yongsheng Tang", he named it "Desheng Tang". He specialized in traditional Chinese medicine and improved the formula of pear paste candy.
After 1949, at the height of the public-private partnership in the 1950s, the People's Government organized "Zhupinzhai", "Yongshengtang" and "Detang", and continuously passed the various pear paste candies produced through the Old Town God's Temple.
