Three Cup Chicken is from Jiangxi. In 2008, Three Cup Chicken was selected as the main menu of the Olympic Games. It is a classic Gan dish and a traditional famous dish in Jiangxi. The so-called three cups of chicken, as the name suggests, there is no need to explain. The so-called three cups of chicken are one cup of wine, one cup of soy sauce and one cup of oil. Jiangxi's three-cup chicken is made with one cup of rice wine, one cup of lard, and one cup of soy sauce without adding any water. The three-cup chicken is bright and red in color, with a mellow taste, tender and crispy, salty and sweet. And it also has a unique fragrance.
Three Cup Chicken First, we clean the chicken and drain it. Fresh chicken does not need to be blanched. Heat oil in a pot, add onion, ginger and garlic and sauté until fragrant, add chicken and stir-fry until cooked through, add cooking wine to remove the fishy smell.
Mix sweet rice wine, soy sauce and sesame oil evenly, pour into the pot and stir-fry. Add 2 bowls of water and simmer over high heat until the soup thickens and the aroma comes out. Then pour the cut lettuce strips and king oyster mushrooms into the pot and simmer together. You can add a bowl of boiling water to prevent them from sticking to the pot.
After the vegetables are simmered, turn on high heat to drain the soup and serve. Sprinkle with white sesame seeds and garnish with red pepper and chopped green onion.
