What is pink bean?
Powder beans, also known as "cat beans", "northeast oil beans" and "lentils", belong to Leguminosae and are common vegetables in Northeast China. Their appearance is green, some beans have red lines, their fruits are full, and the beans are big and oval. There are glycoside biotoxins in powdered beans, which mainly inhibit cholinesterase. If the cooking method is improper, the toxin is not cooked and the toxin is not destroyed, it will produce clinical manifestations similar to organophosphorus pesticide poisoning. It usually occurs 4 to 8 hours after eating. The incubation period is as short as 30 minutes and as long as 24 hours. Symptoms such as dizziness, headache, nausea, vomiting, abdominal pain, weakness, numbness of limbs, muscle tremor and palpitation may occur. Severe cases include salivation, sweating, pupil contraction, blood pressure drop, trance or coma. Pregnant women will have contractions when eating, so pregnant women should not eat.
