Laoxu Sauce Liquor: “12987” Technology
All wines have alcohol content, and Laoxu Sauce Liquor is no exception, but it is not about mixing alcohol and water. Can become a mellow wine. Compared with other flavored liquors, the production cycle of Laoxu Jiangjiu is extremely long, taking about a year. Moreover, the koji is made during the Dragon Boat Festival every year and the ingredients are added during the Double Ninth Festival. After nine times of cooking, eight times of fermentation, and seven times of wine extraction, it needs to be stored in the cellar for more than three years, and then blended and aged for one year before it can be packaged and sold. It takes five years of hard work to brew a bottle of good Laoxu sauce wine.
Laoxu Jiangjiu: How to make koji?
After grinding the wheat, mix in a certain amount of koji (Chen koji), and then the workers will step out the "turtle-shaped" koji pieces that are tight on the four sides and loose in the middle, which will help complete the fermentation. The formed curved block needs to be wrapped with straw and placed in a closed warehouse. After ten days, the curved block is turned over. The curved block will be ready in about thirty or forty days.
Laoxu Sauce Wine: How to Brew it?
