Where does Lanzhou Ramen come from?

Lanzhou Ramen is a specialty delicacy of Lanzhou City, Gansu Province, formerly known as Lanzhou Beef Noodles.

Lanzhou Ramen began during the Jiaqing period of the Qing Dynasty. It was brought to Lanzhou by Ma Liuqi from the Dongxiang tribe who learned it from Chen Weijing in Qinghua, Huaiqing Prefecture, Henan Province.

The real Lanzhou clear soup beef noodles evolved from the old beef noodle soup in Qinghua, Huaiqing Prefecture, Henan Province, and now Boai County, Henan.

Afterwards, later generations Chen Hesheng, Ma Baozai and others unified it with "one clear (soup) two white (radish) three green (cilantro and garlic sprouts) four red (spicy seeds)? five yellow (noodles are yellow and bright)" The standard of Lanzhou beef noodles.
