The origin of Three Cup Chicken

Origin:

At the end of the Southern Song Dynasty, the national hero Wen Tianxiang was captured while resisting the Yuan Dynasty. An old woman from Jiangxi Province learned that Wen Tianxiang was about to be killed, so she brought a chicken and a jug of wine to visit him in prison.

With the help of a fellow jailer, the old woman met Wen Tianxiang. She packed up the chicken she brought and cut it into pieces, poured three cups of rice wine into the earthenware bowl, and simmered it over low heat. An hour later, the two brought the chicken to Wen Tianxiang, who ate his last meal with hatred for the country's subjugation.

After the jailer returned to his hometown of Ningdu, Jiangxi Province, he would serve this dish to commemorate Wen Tianxiang on his memorial day.

Later, the chef changed the three cups of wine into one cup of sweet rice wine, one cup of soy sauce, and one cup of lard, and used Ningdu yellow chicken, a specialty of Ningdu, Jiangxi, as raw materials, and the prototype of the current "Three Cups of Chicken" was born.

In 2008, this dish was also selected as the main menu of the Olympic Games. Extended information
