Brewing technology

The brewing of liquor is closely related to the local natural geographical environment. In order to trace the source, Jiang chose the brewing base winery as the birthplace of Xiaoqu Fen-flavor liquor-Baisha Ancient Town, jiangjin district, Chongqing.

Baisha ancient town has a long history. It was inhabited as early as the Eastern Han Dynasty, and an organizational town was established in the Yuan Dynasty. The soil here is rich in trace elements beneficial to human health, and the average content of selenium is 0.3 187mg/kg/kg.

Jiang used red glutinous sorghum planted in local selenium-enriched soil as a single raw material, cooperated with local clear soft water, and made pure fermentation in Qingshiban cellar, inheriting the lean brewing and distillation process of Baisha ancient town, enhancing aroma and removing impurities, and finally brewed pure sorghum wine with pure aroma, smooth entrance, clean and refreshing taste and unique flavor.
