What are the allusions to Beijing snacks?
Eating, commonly known as tea food or "eating", was first described by Qu Yuan, which shows that it has a long history. Beijing snacks can be divided into three series: Muslim, Han and court, with rich methods.

Steaming, frying, boiling, roasting, frying, frying, etc. There are many kinds of snacks in Beijing, which Mr. Yi Shu called "the art of snacks". Old Beijing Muslim snacks are the most prosperous and rich in variety. As for the famous Muslim snack bar in Beijing today, of course, we have to mention Huguosi snack bar.

Speaking of Huguosi snack bar, we have to start with Huguosi Temple Fair in old Beijing.

According to historical records, Huguo Temple was built in Yuan Dynasty. In the old days, there was a temple fair on the eighth day of the eighth lunar month, which brought together famous specialty vegetable vendors in Beijing. According to the memories of the older generation, the most attractive thing about Huguosi Temple Fair is to bring food stalls from all over the world. The stall owners set up cloth tents, displayed font sizes and put them on long tables and stools. Some simply put the burden on their shoulders, or push the unicycle to find a place. When the temple fair stopped, they sat by the stove, put the seasoning jar and bowl chopsticks beside the pot, and started the "battle", ready to sell: "Come with bean flour cakes and ask for sugar money!" Snacks and tea at temple fairs are the most popular foods. Snacks such as rice cake, enema, boiled mutton paste sausage, scones, bean jelly, fried belly and tea soup are all available in food stalls. The temple fair of Huguo Temple in 1930s was very lively. All kinds of Beijing-style snacks compete here, showing their charm.

1956, the government organized more than a dozen famous vendors at the temple fair, including Cha, Bagaonian, Sweet Potato King, and Zhang, who deals in mutton paste sausages. At the present address No.93, next to Huguo Temple (opposite to People's Theater), Huguo Temple snack bar was opened, which collected the essence of Beijing snacks and operated Aiwowo, pea yellow, bean powder cake, honey twist and bean juice.

In the past 50 years, Huguosi snack bar has retained the traditional varieties of Beijing flavor of the old shop, but the appearance of the store has changed with the transformation of Beijing city, and the dining environment has also changed. Moreover, the snacks sold not only keep the flavor of old Beijing, but also are adjusted according to the changing needs of modern people's tastes. Specially hired an old technician, Yang Boru, to enter the store to teach skills and turn the original big, dark, thick and unpalatable food into a small and exquisite snack. Although the environment has changed, the purpose of serving the people economically has not changed. Due to the change of dining environment, snacks are of high quality and variety, attracting a large number of Chinese and foreign diners. 200 1, Huguosi snack bar was further renovated, which not only highlighted the characteristics of old Beijing style, but also allowed customers to enjoy the elegance of old Beijing while tasting old Beijing snacks. The roof of the store is decorated with blue tiles, the picture frame of the temple fair of Huguo Temple is hung on the wall, snacks and celebrities are hung on the four pillars of the house, and a plastic display stand of the old Beijing noodle restaurant is specially set up.

In addition, Huatian Catering Group has also given special policies to its snack bars, including investing in the unified decoration and marking of the gables and environment of snack bars, and constantly excavating and improving traditional varieties: pea yellow is too thin, snowballing and adding layers, screwing screws, spitting honey from horses and toads, and standardizing procedures to ensure accurate materials. Snacks pay attention to seasonality, such as yellow peas and aiwowo in spring, fish in the "ice bowl" in summer, beef tendon and limp flowers in autumn, pot stickers, bowl cakes, fruit rice cakes and Yuanxiao in winter. At the same time, snacks are also popular according to the changes of customers' tastes. There are all kinds of dry, thin, sweet and salty meat and vegetables, such as glutinous rice cake with butter mouth, assorted fried bumps, spicy chicken noodles, ox-eye steamed buns, cream fried cakes, pork chops with ginger sauce, mandarin duck cakes, butterfly rolls, beef biscuits and orchid lanterns. At present, after excavation, introduction and innovation, the variety of snacks in Huguo Temple has reached 100, which can be described as dazzling and colorful.

During the 1999 Spring Festival held in Singapore, the 13th Spring Festival went to Binjiang Beijing Folk Exhibition, and more than a dozen kinds of classic snacks of Huguo Temple were splendid, which made Singaporeans' eyes "bright". The headline news of the radio and TV station that day: Beijing snacks are great! Singapore Prime Minister Goh Chok Tong attended the event and immediately booked 65,438+000 "snowballing children" for the state banquet. In the following years, Huguosi snacks gradually became famous. Whenever large-scale international and political activities are held in Beijing, Huatian Huguo Temple is specially invited to serve snacks.

Nanchang Street Muslim Restaurant: West of the south side of Xihuamen. There are also some snacks, such as fried belly, fried cake and fried bumps. Stir-fried bumps taste good. Like Enyuanju's, the pimples are all fried by hand (many shops add pots by mechanism and taste like leftovers). The disadvantage is that the side dishes are not rich enough. It is best to add diced cucumber and mung bean.

In addition, there is a Minlexuan Muslim Pot Sticker Hall in the east of Liubukou Concert Hall Road, which is the original Hongbinlou Pot Sticker Hall.

Dongcheng:

Long Fu Temple Fair Snack Bar and Bai Kui Time-honored Brand: Dongsi Long Fu Temple Street, diagonally opposite to Long Fu Building. Long Fu Temple snacks used to be famous, but with the decline of Dongsi Commercial Street and several demolition and construction, it is not as good as before. The two stores are connected together, and the storefront is very large.

Bai Kui Old Restaurant: the west side of the northwest corner of Beixinqiao intersection. Qianyangchun Huimin snack bar Bai Kui Laohao's roast mutton and doornail patties are very famous. Close to the Lama Temple, imperial academy, Confucius Temple (Capital Museum) and the south gate of Ditan.

Bai Kui Old Restaurant: northeast corner of Kuanjie intersection. This is the head office. Besides cooking, there are snacks, and the dining environment is good.

Long Fu Temple Snack Branch: Near Beixinqiao South 12 Street, the store is small but clean.

Long Fu Temple Snack Branch: On the east side of the Drum Tower, there is a small storefront. Nearby attractions: Shichahai, Bell and Drum Tower.

Long Fu Temple Snack Branch: West Andingmennei Street 104 Road, in front of Fang Jia Hutong Station. Nearby attractions: imperial academy and Confucius Temple.

In addition, Long Fu Temple snacks have a stall next to Wangfujing Jinghua Store, but there are few kinds of snacks, and they actually sell mutton skewers and old corn.

Xinghua Gourmet Fried Belly Shop: Located opposite the Red Mansion on the beach, there are Muslim snacks besides fried bellies, and the meat pies are delicious. The store is not big. Surrounding attractions: Forbidden City, Jingshan and Huangchenggen Ruins Park.

Muslim Ruizhenhou Restaurant: southwest corner of Dongsi intersection. Only snacks are brought, and there is a "Xingyuelou Fried Cake" counter.

Chongwen:

Jinfang Huimin Restaurant: East Road on the north side of Hongqiao Market. It is near the east gate of the Temple of Heaven. Jinfang's Lantern Festival is very famous, and there will be a long queue in front of the fifteenth day of the first month. The previous period was poorly managed. Recently, it has been improved, the hygiene is cleaner than before, and there are more varieties. The only constant is the meat pie. Although the big one was replaced by the small one, it was still terrible. Too many onions!

Jin Xin Bean Juice Shop: northeast of Ciqikou intersection. A few years ago, it was one of the few places in Beijing where you could drink bean juice. Now most snack bars have bean juice. (Note: I drank it when I was a child. People who drink it for the first time may not be used to the taste and smell, but after drinking it several times, I became addicted. )

Honghu Huimin Snack Bar: It used to be in Longtan Beili, but now it has moved to the northeast corner of beijing amusement park intersection due to demolition. The dining environment is too bad and there are not many varieties, but it is ok to eat early.

Fangqun Huimin Snack Bar: North of Xihuashi Street, the dining environment is not good.

Old Ciqikou Bean Juice Shop: Newly opened, east of Honghu Snack Bar. After the restructuring of Jin Xin Bean Juice Store, someone opened a new store.

Xuanwu:

Nanlaishun Restaurant: Located on the west side of Daguan Garden, it was moved from Caishikou, with snacks on the first floor, instant-boiled mutton on the second and third floors, and stir-fried dishes. The environmental sanitation is good and the price is not expensive, but the geographical location is relatively partial and the popularity is not strong.

Xinhua Snack Bar (non-Muslim): West of the intersection of Hufangqiao, which used to be famous for its bean juice. Dinner is only bean juice and pot stickers. Recently, Liulichang and Xinhua Street have to be widened. It seems that this store will inevitably be poisoned.

Dashilan Nanlaishun Restaurant: the east entrance of Dashilan Street, but now it mainly deals in northwest snacks, instant-boiled mutton and roast duck, but there are no Beijing snacks.

Nanlaishun Bakery: North of Caishikou and West Road, the frontispiece is very small, only for take-away. It's about to be demolished, and its whereabouts are unknown. (Note: Fried cakes are good. Buy it every time you pass by. I don't know where they are now, but I have to ask ...)

The hottest seller of fried cakes now is a Tianjin restaurant (Hong Jingtian) next to Hufangqiao Workers' Club.

(Note: A shop selling fried cakes next to the Yangxiezi store on Xisi Road West is also very popular, and you have to queue up every time you pass by. )

Enyuanju: Qianmen Coal Market Street, opposite Dali Hutong. Enyuanju's fried pimples are said to have obtained the true biography of Mukezhai. At present, there are six kinds of flavors, such as three fresh, mushu, diced chicken, beef, minced meat and mutton, which are absolutely first-class, but the business situation is worrying, and Meishi Street is also facing demolition.

Tongzhou:

Xiao Lou Hotel: Tongzhou South Street North Exit (behind hualian department store). Tongzhou Xiao Lou is a century-old Muslim shop, and its cooking catfish is called one of the "Three Treasures of Tongzhou". The other two treasures are sugar fire in Dashunzhai and fermented bean curd in Wantong sauce garden. There is a snack bar on the first floor.

There are also some state-run non-Muslim snack bars:

Tianxingju: Located in the fresh fish mouth opposite Dashilan, the fried liver is the most authentic, and there are some other snacks, but the steamed stuffed bun is very ordinary.

The only place: located in the fish mouth of Qianmen Street, dealing in steamed dumplings and cooking on the second floor. Its traditional and famous bombing triangle has not been restored. There is a branch in Fangzhuang Restaurant Street, opposite Fangzhuang Gui You.

Ruibin Building: Dashilan Door Frame Hutong, featuring fire.

Qingfeng Steamed Bun Shop: It operates fried liver steamed buns next to Xi 'anmen Muslim Restaurant. It used to be next to Xidan Chang 'an Grand Theatre, which was very popular in the early 1980s. Beijing steamed buns are actually Tianjin steamed buns. There is a new branch opposite Daguanlou Cinema in Dashilan Street. The other branch is in the east of T-junction in Xinjiekou, next to Xinchuan noodle restaurant.

Xisi Steamed Bun Shop: Southwest corner of Xisi Road, which deals in fried liver with steamed buns. Now play the sign of two friends' residence.

Wonton Hou: Eight sides of Wangfujing Street. Branches are: 1, Gulou East; 2. East of the north side of Hepingli intersection; 3. Next door to Dongsi Long Fu Temple snack bar.

Fengnian enema hall: East exit of Longfusi Street in Dongsi, specializing in fried enema.

Minghua steamed dumplings restaurant: the northwest corner of Dongsi intersection.

Meiyuan Dairy Store: The east side of the intersection of Taiji Factory faces north, the west side of Xisi T-junction and the west side of Qianmen Street are relatively old. There are mainly almond tofu, cheese (not cheese), milk rolls, cheese, milk cakes and so on. In addition, there is a branch at the northwest corner of Xibianmen overpass.

Other famous snacks:

Maji Yueshengzhai, Hubu Street: On the west side of Hutong Ruibin Building, the gate frame of Dashilan, there are a lot of chowder, with fresh materials and good pine meat, which is fried now. But the dining environment is very simple.

There are two doorframe hutongs in Langfang, east of Ruibin Building. (Note: It also deals in Beijing traditional instant-boiled mutton). There is a branch on the ground floor of Xibei Youmian Village in Liuliqiao.

Full belly: the west side of the east gate of Taoranting Park (near the overpass). The tripe was first discovered in the southwest corner of Dongsipailou and closed before the Cultural Revolution.

Shenglong Jin tripe shop: the west side of Jiandemen Bridge goes northbound, and it is removed from Dongzhimen. The former Dong 'an market in old Beijing has a stomachache, and it was defeated in the battle for trademark rights with doorframe hutong a few years ago.

Dongxingshun tripe Zhang: Qianhai Dongyan, east of the barbecue season. The frontispiece is very humble. Recently restored "goat cream sausage"

Tea soup Li: East of the east gate of Taoranting, not far from the full belly.

Li Ji Baishui Yangtou: North of the west side of zhushikou, under the overpass. There are many snacks besides white water sheep's head.

Sheep head horse: northwest of Liuliqiao overpass, basement of Xibei Youmian Village. When the oil noodle restaurant was opened, there were eight famous snacks, but now there are only sheep's head horse and tripe-fried chicken.

King of fried tripe: Lu, south of Di 'anmen Bridge, deals in fried tripe and doornail patties. It is said that it used to be the one in North Street, but I don't know why there is only the sign of "Fried Bell King" in the store, and there is only the word "Fried Belly Shop" outside the store.

Door nail Li: Chegongzhuang in the west and Santasi Road in the north. Dealing in doornail patties and tripe.

About niujie snacks:

After the demolition of niujie, several families moved to Nanheng West Street (Nanheng West Street will be demolished recently), and there are three famous ones on the west side of Beijing Health School. They are:

Hongji snack bar: Beef is very famous, and it also deals in all kinds of sticky goods, fried cakes, loose meat and so on. (Note: I once bought 1 kg beef here, and I ate it with 1 kg pancakes. )

Old tripe man: (unlike the tripe man in Taoranting, he is said to be a relative) Now we don't sell tripe, but only spiced beef and mutton biscuits, which are good and cheap at 2 yuan each. However, Nanheng West Street has to be demolished recently, and it is only a stopgap measure for the old man to move to Qingfangzhai Restaurant 50 meters east. (Note: The spiced beef and mutton with sesame seeds are delicious, and there is one in 2 yuan, which will only be available after 4 pm, and there is a queue every day).

Rice cakes and plums: all kinds of rice cakes and sticky goods.

Niujie Muslim Snack City: East of Health School, but there are no authentic snacks (Nianji Sauced Meat, No.9 Meat Pie and 14 Capricorn recommended by netizens are all good).

Zhibinlou Restaurant Snack Department: South exit of Jiaozi Hutong, with a variety of snacks and a good environment. Soymilk for breakfast is especially delicious, which is called "bittern taste". A bowl of soybean milk, two cakes of sugar and oil, and a standard Beijing breakfast.

There are also some small shops that are not well-known, but each has its own unique skills. For example, there is a small shop at the east exit of Nanheng West Street, and the tofu brain is delicious; There are always people waiting in line to buy steamed stuffed buns in the shop opposite the rice cake Li.

In addition, the newly-opened Muslim supermarket in niujie has snacks on the first floor and only moved back to a "rice cake money".

About pot cooking:

The full name of Lu Wei is Lu Huo, also called Lu Wei Xiao Chang. Originated from Soviet-made meat and formed late. The most famous is Xiao Changchen. Xiao Changchen's old shop is at the east exit of South Hengdong Street, Hufang Road, which has been demolished. Every store is opened by its own family after separation, not a chain. Most of them are small shops, and several small Changchen restaurants opened by my daughter are large-scale. They also provide casserole stew, stew hot pot and all kinds of stir-fried dishes (mainly water), and the dining environment is also good. But it lacks the fun of going to the market around the stove.

Xiaochangchen: There are two doorframe hutongs in Langfang, next to Maji Yueshengzhai. (Note: Yes, it smells delicious from a distance. The material is mainly pig water, next to the Muslim restaurant, which is very peaceful and peaceful. )

Xiaochangchen: Nanheng East Street, not far west of the former old shop.

Xiao Changchen: Opposite the Hufangqiao Workers' Club, Lazhu Hutong.

Xiaochangchen Restaurant: Yongwai Majiapu, north of Innovation West Road.

Xiaochangchen Restaurant: Fangqun Garden Area 3 (Fangqun Road), next to Fangzhuang Police Station.

Xiaochangchen Restaurant: Outside Anding Gate, south of Waiguan Xie Jie Road.

In addition, in the north of T-junction of Taiping Street in Taoranting, there is a Chenji pot roast, which tastes good and is said to be related to Zhang zhen Jr.

Zhong Yi Restaurant: Dongsi intersection is east of North Road and has four handles. There is a "stew" sign in the shop. Zhangji stew in Guanghelou Theater in the old Beijing meat market is very famous, but I don't know if this one is another.

There are also several famous stew shops, but they are not old brands: Tiandachang: south of Andingmen overpass; Lin Kai stew: south of the road west of Hufangqiao intersection, engaged in stew for more than ten years; Fried liver coke: Zhao intersection of Xinei Street, facing demolition; There is also a small shop on the east side of the Drum Tower, which sells fried liver with brine and is a bit famous on the Internet.

I feel that Xiaochangchen tastes the best and the price is not expensive (generally the bottom of a bowl in 5 yuan). Unfortunately, Xiaochangchen lacks white meat at the bottom of the pot, but other stores have it instead.
