Foshan, referred to as "Zen", is a famous cultural city with a long history. It is a prefecture-level city under the jurisdiction of Guangdong Province, the Republic of China. It was established on June 26, 1951. This is the hometown of Huang Feihong and Bruce Lee, and is the economic center of the Pearl River Delta. A famous commercial city with thousands of years of glory, it has been forged with the endless sacred fire of the Pottery Capital to create a city that "dare to be the first, admire literature and be pragmatic".
Foshan "made its mark in the Jin Dynasty and got its name from the Tang Dynasty". As early as the Qin and Han Dynasties, it had become a large-scale village where farmers and fishermen lived, and the villagers called it "Jihua Township". In the second year of Zhenguan of the Tang Dynasty (AD 628), three Buddha statues were excavated on Tapogang in the city, and a stone list was erected to call it "Foshan". During the Tang and Song Dynasties, Foshan, along with Hankou Town in Hubei Province, Jingdezhen Town in Jiangxi Province and Zhuxian Town in Henan Province, were known as the "Four Famous Towns" in my country.
After the founding of the People's Republic of China, Foshan City (referring to the current Zumiao Street) was established on June 26, 1951; Foshan Prefecture was established in 1956, governing the three cities of Foshan, Jiangmen and Shiqi. and Zhongshan and other 13 counties; in 1970, the Foshan Prefecture was renamed as the Foshan Region, with jurisdiction over Foshan, Jiangmen and 12 counties including Zhongshan; in June 1983, a city-led county system was implemented, with jurisdiction over 5 counties including Zhongshan.
Blind male cake is one of the famous local products in Foshan City, Guangdong Province. Because it was created by a blind man. Hence the name Blind Man Cake. It was created in the late Pu Jiaqing era (1796-1820), which is 160 years ago.
The blind man's name is He Shengchao. When he was eight years old, he became blind due to a poor family and no money for medical treatment. He began to learn divination at the age of ten. After completing his studies, he opened the "Qian Qian Tang" Gua Ming Pavilion at the entrance of Jiaoshanfang in this city, which was quite popular among some people at that time. He has two sons, one is Yinyuan and the other is Fenxing (named Yuzhai). Yuzhai, on the other hand, serves his father in the pavilion. Because most of the querents bring children with them, they make noises and cry, which affects the work. Yu Zhai then came up with a method: grind rice coke into rice flour, add sesame seeds and peanuts, and mix it with raw oil to make rice cakes, which are called "meat cakes". (Nowadays, the seal of the blind cake still has the word meat cake.) In this way, it can be sold to people asking for fortune to lure children, and it can also make more money to support the family. Because of the ingenious production, sweet fragrance and delicious taste, and the low price, more and more people buy it. In order to make a profit, neighbors also imitated and sold the meat cakes, but the quality was not as good as the "genuine" ones. People flocked to He Shengchao to buy the meat cakes, and the story passed down from generation to generation. People who bought the meat cakes from the Blind Man called the meat cakes "Blind Man Pancakes". The Blind Man Cake got its name from this. In feudal society, a blind person was most afraid of others calling him a blind man. Therefore, for more than a hundred years, although Bai Gong cake has become famous in the market, his descendants do not use Zigong cake as a sign, but Heji meat. Heart cake is named after it. Since the liberation of the People's Republic of China in 1952, our city participated in the South China Material Exchange Conference. In order to vigorously promote Foshan's local products, it officially designated the trademark as blind public cake.
Since the blind man cake became famous, the number of buyers has increased, and many of them use it as a gift. When it was first made, the shape of the cake was larger than a copper dollar, and there was no pork heart. After 1875, in order to keep improving, pork heart was added. After the establishment of Heji, it has employed 12 to 13 workers for production over the years, but the actual production staff is only seven or eight. The daily output is about 10,000 jins. The peak period was from 1933 to 1936. The overtime production was 15 to 16 hours a day, and the daily output was more than 20,000 jins. Most of the cakes are sold to Dongguan and Shilong areas. Tourists from the province, Hong Kong and Macao who come to Foshan buy more blind man cakes to give back to their relatives and friends. Before liberation, Hejihao was always sold on a retail basis at the old shop in Heyuanshe. There was no wholesale or agency, and the export quantity was very small. In the year before the Anti-Japanese War, the export was only 4,800 kilograms, and it was finely bound in iron cans ( No meat heart) Entrusted by foreign ships to carry goods for export. The Japanese invaded the south and Foshan fell. They were looted and killed everywhere, and the people were in dire straits. The sales of blind public cakes plummeted, and most of the production workers returned to their hometowns to work in agriculture. The format of the baigong cakes has since changed from large to small, and has been changed from selling each to selling per tube (every ten is one tube). The daily production is 300 to 400 units, but the business is sluggish, and sometimes there is no production for several days. After the victory of the Anti-Japanese War, production recovered slightly, and workers gradually returned to Foshan from the countryside. However, under the reactionary rule of the Kuomintang, production still did not develop greatly. The daily output was only 30,000, which was approximately equivalent to 15,000 large pancakes before the war. , has not yet returned to pre-war production levels.
The production of blind male cakes is different from ordinary cakes and has its own unique features. Most of the cakes sold on the market are made with flour, while blind male cakes are made entirely of glutinous rice with sugar and peanuts. , sesame, pork, raw oil and other high-quality raw materials are skillfully made. The pork sandwiched in the cake is made in a more exquisite and exquisite way. It is marinated in fine white sugar for several months (at least a few days) before being taken out and prepared. It tastes sweet and crispy, delicious, and is well-known at home and abroad. For hundreds of years, the production method has been simple, using earthenware pots to hold the ingredients and baking them, and the production was done while sitting, which was extremely inefficient. It was not until the public-private partnership in 1955 that the chopping board system was switched to standing production. Due to improved operating methods, production efficiency has been greatly improved. Currently, product specifications are available in two sizes, the large one has six per tube, and the small one has ten per tube. There are also paper boxes and tin cans for export or gift giving.
