According to the "Regulations on the Protection of Products from Regions of Origin", the State Administration of Quality Supervision, Inspection and Quarantine passed the review of the application for protection of products from regions of origin of Shanxi mature vinegar, and approved the protection of Shanxi mature vinegar from August 9, 2004. Mature vinegar implements regional protection of origin (State Administration of Quality Supervision, Inspection and Quarantine Announcement No. 104, 2004). (1) Main raw materials:
1. Sorghum: complies with the requirements of GB8231, with a starch content of more than 60%.
2． Daqu: Using barley and peas as raw materials, it is made under natural conditions within a protected range.
3. Water: The production water is groundwater in Taiyuan Basin, which complies with the regulations of GB5749 and has a total hardness of 7 to 8 degrees.
(2) Processing technology: Daqu is used as saccharification starter, and the process of "steaming, fermenting, smoking, leaching, and aging" is adopted, and "extended alcohol fermentation, aceticization, high-temperature fire, and smoked leaching of vinegar fermented grains" are used. "Storage, aging and aging" technology, the aging time is not less than 10 months.
(3) Quality characteristics:
1. Sensory indicators. The color is brownish red to reddish brown, the aroma is pure and soft, and the aroma is rich; it is sour when eaten, the taste is mellow, sweet and sour, slightly fresh, thick, clear, and is nothing but the sediment of fermentation substances.
2． Physical and chemical indicators: total acid (calculated as acetic acid, g/100ml) ≥ 4.50, non-volatile acid (calculated as lactic acid, g/100ml) ≥ 0.70, reducing sugar (calculated as glucose, g/100ml) ≥ 0.80, total esters (calculated as ethyl acetate) Ester (g/100ml) ≥ 1.80, soluble salt-free solid (g/100ml) ≥ 6.00.
