Historical evolution
Flower-arranged Gaojia beef soup originated during the Daoguang period of the Qing Dynasty and has a history of nearly 200 years. The founder is Gao Jiancai’s father. Gao Jiancai was originally a butcher who made a living by slaughtering cattle and selling meat. Due to the poor living standards at that time, it was difficult to store the leftover beef, so the Gao family and his son found ways to make the current Gaojia beef soup. At first it was just a pot with a diameter of more than one meter, with a large vat with a hollow bottom covered on it. It could cook hundreds of kilograms of beef at a time for more than ten hours. After the beef comes out of the pot, the soup is rich and fragrant. The soup becomes a paste after cooling, but the beef remains fresh and tender. Due to its unique craftsmanship, the soup was recognized and praised by the local people. It gradually formed a special feature, became famous in the local area, and became a household name. Now it is not only well-known in flower arrangement and Fuyang, but also Spread to Shandong, Jiangsu and other places, it has gradually become an indispensable delicacy in the daily life of people in the Huanghuai area and is deeply favored by people.
Process flow
Select adult high-quality cattle, slaughter, peel, break, and remove bones, then divide them into four large pieces, rinse them clean, and put them into a large pot with water. Cook, take out and cool, cut the cooked beef into small slices, blanch it in hot soup, put it into a bowl with the scalded vermicelli, add hot soup and it's the finished product.
