Water chestnuts are commonly known as horse chestnuts. Ruijin water chestnuts have thin skin, juicy taste, sweet taste and no residue. They can be eaten raw or cooked, and can also be processed and canned.
Water chestnuts are suitable for planting in paddy fields with sufficient sunshine, convenient drainage and irrigation, and medium fertility. Seedlings are raised in early July, transplanted in late July, and harvested in December. The city's planting area is more than 2,000 acres, with an annual output of more than 8 million jin. In addition to local domestic sales, large quantities are sold to Guangdong, Fujian, Shanghai, Nanchang and other places. The canned water chestnuts produced are also exported to earn foreign exchange.
