They drank nearly half of the wine in the jar without realizing it. How could they communicate with each other? What should they do? So, in a hurry, they mixed mountain and stream water into the jar to fill it with wine, so as to fool around. Unexpectedly, when they arrived at the wine competition venue, the wine tasters opened the wine jar, filled the glasses and tasted it, but the aroma was fragrant and the aftertaste was endless. "A drop of wine drops down the belly, and a thousand pearls roll down the throat." The sweet, sour, bitter, spicy, and salty, all five flavors are so wonderful that it ranked first and won the first prize. After returning home, the shopkeeper asked about the whole story, and the boy revealed his true feelings. The shopkeeper, together with the winemaker and the boy, went down the mountain stream to check the source of the water. It turned out to be snowflake water flowing from the top of Taibai Mountain. This water meanders through the Taibai Mountains, passing through rock formations, filtering gravel, and passing through peat. It not only plays a cleaning and filtering role, but also brings in many beneficial minerals. Therefore, the water is not only clear and sweet, but also contains minerals, so it is most suitable for brewing fine wine. Since then, the reputation of Jinqu Wine has spread like wildfire. There is a beautiful saying in the land of Sanqin: "There are good springs in the famous wine production areas, and the fermented grains need to be refined to pass the strict test. By borrowing the water from Taibai Lingchi, it becomes a jade liquid that drunken the Eight Immortals."

In the Tang Dynasty, with the addition of "Taibai snow-covered June sky", it was the first of the eight scenic spots in Guanzhong. Therefore, it attracted many celebrities, poets and elegant scholars in the past dynasties to climb mountains, enjoy the scenery, drink wine and compose poems. For example, Tang Xuanzong, Yang Guifei, Han Yu, Du Fu, Su Dongpo and others all visited Taibai Mountain and drank the famous Taibai wine, which made it even more famous. In the first year of Tianbao in the Tang Dynasty (742), Li Bai, the "immortal of poetry", was ordered to go to Chang'an from Xishu via Baoxie Road. He came to Jinqu Town and drank this wine happily. He was full of praise and seemed to be drunk. He recited it for eternity. The final chapter "The Road to Shu is Difficult". This is the allusion of "Taibai wine is mellow and the poet is drunk". In order to commemorate Li Bai, later generations built the "Taibai Temple" in Taibai Mountain, and named the famous local wine that Li Bai had drunk "Taibai Wine".

Shaanxi Taibaijiu was founded in the Tang Dynasty and flourished in the Ming and Qing Dynasties. It has been famous for thousands of years. According to local chronicles, during the Qianlong period of the Qing Dynasty, there were many breweries in Jinqu Town, Mei County, among which the Guangfayong, Tianfucheng and Taiquan hotels were the most prosperous. As early as 1973, it won the second national wine appraisal meeting and was rated as one of the eight high-quality local famous wines in the country, and was included in the "Biography of Famous Wines"; in 1981, it was rated as a high-quality product of Shaanxi Province; in 1984, It was rated as a quality tourism product in Shaanxi Province; in 1985, it won the title of Shaanxi Province's Local Famous Wine; in 1988, it won the Silver Award for National Quality Products; in 1990, it was rated as a national quality product and won the Gold Award. It was rated as a national outstanding tourism product and won a medal from the Ministry of Light Industry. In early May 1987, Japanese friends came to the Taibai Winery at the foot of the Qinling Mountains to taste Taibai wine and wrote a banner with the inscription "The best wine in the world". Taibaijiu has won many awards in international competitions. In the early 1990s, as a famous Shaanxi wine, it was included in the book "Native Specialty Products of the Qinba Mountains". Shaanxi Taibai Liquor was once used as the base liquor for valuable medicinal liquor. It sells well in Northeast, East and West China. It is more popular among consumers than in other provinces and regions. Exported to Japan, the United States, France, Germany, Southeast Asia and more than ten countries and Hong Kong and Macao regions. And it was the first to register in the United States and Glassvia, becoming famous all over the world.

Why did Shixian call him "Taibai"

In the first year of Tang Tianbao, 40-year-old Li Bai set out from his hometown (now Jiangyou, Sichuan) to Chang'an.

Li Bai looked at the majestic figure of Taibai in the distance with his drunken eyes, and the hardships and dangers of the Shu Road came to his mind. He was very excited, and he wrote the famous poem "The Difficulties of the Shu Road" in one stroke. In his poem, he specifically wrote about the precipitousness of Taibai Mountain: "There is a bird path in Taibai in the west, which can cross the top of Emei; the earth collapses and the mountain kills the strong men, and then the stone stacks of the ladder to the sky are connected..." After he arrived in Chang'an, he wrote this poem When he met Secretary Supervisor He Zhizhang, He couldn't help but praise Li Bai and said: He is not a human being, but he is the golden star of Taibai! From then on, Li Bai called him "Li Taibai" and became friends with He Zhizhang. They were both the famous "Eight Immortals" in wine at that time.
