What kind of stainless steel does Rolex use?

What is the gas (or helium) escape valve on the Sea-Dweller used for?

Please note: I am not a diver, so I know nothing about this. During a saturation dive, the diver is under extreme pressure and can therefore dive for extended periods of time. They can stay in deep water for longer periods of time without going through the decompression process. Because helium molecules are so small, high-pressure gas (usually mixed with helium) can penetrate into the watch from the unscrewed crown.
