Liquan noodles are a specialty snack in Liquan County, Xianyang City, Shaanxi Province. Liquan noodles can be eaten with soup or dry. Its characteristic way of eating is called "斖 (sound: miao, one sound)", which is to put the noodles in a bowl and pour boiling water over it repeatedly. Then add the condiments and it's ready to eat. The condiments are quite unique. The chili noodles are mixed with fine lard, chopped green onion, chive leaves, salt and locally brewed balsamic vinegar.
