The method is as follows
①Punch red beans into powder , add milk and cook, stir-fry until pureed and set aside.
②Peel and steam the yam, press it into puree, add some glutinous rice flour and knead it into a dough, divide it into small portions, take a little dough and add some beetroot powder and knead it into a red dough.
③ Take a small dough and roll it into a rectangular shape, wrap it in bean paste and tighten it, roll it into a long strip, put it into a mold and press it into a rabbit shape (for babies who don’t have a mold, just make it into a U shape).
③ Roll the red dough into a long strip, cut it in half, place it at the ears, press it with the head of a chopstick, press the eyes with black sesame seeds, then use the small red dough to shape into a circle and cut it in half to make the mouth.
④ After cooking, steam for 10 minutes and then take it out of the oven.
Tips
① If you don’t want to use glutinous rice flour, you can make it directly with yam paste. Dip your hands in some oil or cooked flour and then shape it. After making the rabbit mooncakes, Eat it directly, no need to steam.
②When making the rabbit’s facial features, dip it in some water for better adhesion.
③Red bean paste can also be soaked one night in advance, then steamed and pressed into puree, depending on personal preference.
