Many high-quality red wines in the world are made from Cabernet Sauvignon. In the old world, Cabernet Sauvignon was the main variety of red wine, and the best wine was produced in Bordeaux. As for the aroma of berries, Bordeaux is different from California. For example, Mouton red wine, one of the five famous villages on the left bank of Bordeaux, and Cabernet Sauvignon, one of the five famous villages in the United States, all contain blackcurrants. I think French blackcurrant is relatively small, but the taste of wild berries is very strong, while American blackcurrant is relatively large, not very strong and a little sweet.

Cabernet Sauvignon and Xinjiang varieties planted in China are typical representatives of the new world style. Yiyuan wine from Taigu, Shanxi Province is a wine with the right bank style of Bordeaux in the old world and a little new world characteristics. Shacheng, Ningxia and Gansu in Hebei should be in the middle of the old and new worlds. Changli, Hebei, tends to the old world style. Although the high yield leads to uneven grape maturity and light wine quality, the style is biased towards Bordeaux. As for the Cabernet Sauvignon planted in Yantai, Shandong Province, as far as I have tasted it, it seems that there is no style. It should be caused by insufficient maturity and low yield. Grapes are very green.

There are many excellent cabernets in other countries. For example, Cabernet Sauvignon in Chile has the charming aroma of fruits, flowers and other plants; Argentina's is lighter and the wine is stronger; Australia has a good sense of sour and fruit balance, and good aged wine will have eucalyptus flavor; California, USA, has heavy fruit flavor, fullness and high alcohol content. In addition to the typical blackcurrant aroma of Cabernet Sauvignon, Napa also smells of mint and eucalyptus. In fact, good wine has the taste of earth and ore, just like the taste in good wine Bordeaux red wine.

Good Cabernet Sauvignon mostly comes from the left bank of Bordeaux, such as Saint estay, pauillac, Saint Julian, Margaux, Upper Medoc, Paysac-Leoni, Graf, Napa and Sonoma in California, and Kunavara Valley in Australia. It depends on Chilean Cabernet Sauvignon brands, such as Con cha Y Toro and San ta Rita, which are sold in China. I think the red wine brewed with Cabernet Sauvignon as the main raw material in the new world, except the famous French wines, is generally slightly higher in quality and lower in price than in the old world.
