Two chicken racks
Ingredients: One scallion (only use white scallions), ginger, coriander (put a bunch as thick as your thumb, at least two), thirteen spices, cooking wine , salt, sugar (1 and a half spoons), the finest chili powder (1 and a half spoons), appropriate amount of salt and sesame seeds.
Method:
Chop the chicken rack into appropriate-sized pieces and put them into a container. Add chopped green onion, ginger, thirteen spices, cooking wine and salt and stir well for about 20 minutes. That's it;
Cut the coriander into 0.5 cm thick coriander powder, put the sugar and chili powder into a small bowl and set aside;
Take a large pointed spoon and add a little Heat the oil, add the sugar and chili powder and stir-fry for a while, add the chicken rack, stir-fry for 2-3 times and add the coriander. After adding coriander, stir-fry all the ingredients evenly, then cover the pot, turn down the heat slightly, and stir-fry every 3 minutes or so. It will take about 10-15 minutes. Add cumin and sesame seeds and you are done. .
Suggestions:
1. Add more salt than usual. You can taste it first after adding it. Slightly salty is best;
2. Sugar and chili Put more noodles. For my personal taste, I usually fill the ordinary small rice bowl at home 70% full (of course half chili noodles and half sugar);
3. It is best to put the chicken on the rack Roughly remove the yellow oil pieces, because a lot of oil will be released during the frying process of the chicken rack, but there is no need to remove all the oil, otherwise the unique aroma of animal fat will be gone;
4. When heating the pot Just add a little salad oil, mainly to stir-fry the sugar and chili powder, because the chicken rack will be oily during frying;
5. In fact, my favorite part of this dish is coriander. All the flavors are absorbed just right and delicious, but I also tried adding more, but found that the spicy and fresh flavor was taken away by the coriander flavor;
6. Do not add water when frying, you can add more A little chicken essence to enhance the flavor.
Those who don’t like to eat chicken racks can make it with chicken legs. It’s just as delicious, but it just lacks the fun of eating chicken racks.
