When it comes to tofu, we all think of soybeans, but it is not only soybeans that can make tofu, but also bitter plants. Bitter nuts are nuts, which are rich in nutrients such as starch, lecithin, flavonoids, calcium, iron and zinc. They are good things to make tofu!

Every autumn, when frost comes, it is the season to harvest bitter fruit. Its hard shell is covered with a thin skin, just like chestnuts. When the dry frost blows, the skin cracks and the bitter fruit automatically falls like rain.
Pick up the fallen bitter fruit and carry it home with a basket. After a few days of exposure, the hard shell has also cracked, and you can start making tofu!
Peel off the shell, wash the white pulp, soak it in clear water for 10 hours until it swells, and then grind the pulp into bitter pulp with a stone mill or soymilk machine, as shown in the following figure.

Next, find a breathable cotton gauze and filter out the bitter pulp. The filtered bitter residue can be used to make steamed bread, and the bitter pulp can be used to make tofu.
Let the filtered Castanopsis sclerophylla pulp stand overnight, pour off the brown water on it, and then add water, so that the bitterness will be much lighter. Then pour the slurry into the pot, heat and boil, and turn off the heat when the liquid turns brown.
Pour it into a clean pot and cool naturally, because the starch content of Castanopsis sclerophylla fruit is extremely high, and making tofu is not as complicated as soybean. After boiling the pulp, let it cool naturally and it will become a piece. The molded bitter tofu is brown and slightly bitter, but the bitterness will be removed after a little longer bleaching with cold water.
Leave it for 6 hours and it will cool to pieces. Poke it with chopsticks, it's very elastic! Cut into pieces with a knife. In order to cut completely without touching the knife, you can pour some water on the knife before cutting. Soak in water after cutting, and change the water several times during the period, without bitterness.
Fresh bitter tofu, crystal clear, moist and smooth, elastic, like coagulate fat!
Then you can cook! Cut the bitter tofu into pieces, add carrots and vegetables, and add onions, ginger, garlic and peppers. After stir-frying, the taste is fresh and tender, and it melts in the mouth. It is a good dish to adjust the taste, better than fish.
Bitter tofu is very tender, not only can be fried, but also delicious when stewed. First heat the pot with hot oil, stir-fry the ginger and garlic, then add water and salt, add cabbage and tofu after boiling, and cook for three to five minutes before drinking. It's delicious!
Generally speaking, the process from bitter fruit to bitter tofu is very complicated, and it can't be done without patience, which just shows that as long as you are willing to work hard, you will definitely gain something!
