Vegetable eggs are also called grass eggs, local eggs, stupid eggs, local eggs, and mountain eggs. They are named differently due to different local dialects. Mainly refers to eggs laid by free-range chickens.
Vegetable eggs are generally smaller and have a pink shell, which is in sharp contrast to ordinary eggs. The proportion of egg yolk is larger than that of ordinary eggs (the yolk is relatively large).
Vegetable egg yolk is orange-yellow, and the egg white is thicker, clearer, lower in water, and higher in protein than ordinary eggs. After being cooked, the egg white has good elasticity, strong transparency, easy peeling, no fishy smell, excellent taste, natural and pure aroma, refreshing entrance, fragrant but not greasy, long aftertaste, and high nutritional value. It is an ideal health-preserving egg product. Vegetable eggs contain a large amount of vitamins and minerals and protein with high biological value.
