No matter where there is a banquet, there must be wine. China has its own liquor culture, and other countries also have liquor cultures. However, different countries have different drinking cultures, just as Japanese people like to drink sake, while Chinese people like to drink baijiu. Why is there no market for sake in China? Different brewing raw materials

The biggest difference between Japanese sake and Chinese liquor is the different raw materials. Japanese sake is made entirely of rice, using japonica rice. The Northeast Wuchang rice that is very popular recently is Japonica rice. There is a professional term called "making rice with wine", which means that the rice grains are large, have a heart, and are very plump. This is also different from the regular rice that Japanese people eat, and there is a noticeable difference.

Chinese liquor is mainly brewed from sorghum, wheat and rice. For example, Kweichow Moutai is brewed from sorghum and wheat; Wuliangye is made from sorghum, rice, glutinous rice, wheat and corn. From the perspective of brewing materials, Japanese sake and Chinese liquor belong to two categories.

Different brewing techniques

Sake is brewed wine. Simply put, raw materials containing starch and sugar are fermented into alcoholic beverages. This kind of sake is equivalent to the rice wine brewed in rural areas of our country. This is most similar to Shaoxing rice wine from Zhejiang.

Chinese liquor is distilled liquor, which is distilled on the basis of wine making. The method of distillation is, to use an example, "a kettle boiling water." After the water boils, small water droplets will remain on the lid. If we collect these water droplets, it is high purity distilled water. After the brewing liquor is distilled, the distilled liquor with high alcohol concentration is collected. For example, Kweichow Moutai, Wuliangye, Erguotou and Jiangxiaobai are all produced in this way, therefore, they are all distilled spirits.
