In the 1950s, there was a building called Jincheng Building located northwest of the current Drum Tower Square in Nanjing. This building was built in 1946. The main building is divided into four floors above ground, one underground floor, and the foyer is partially five floors. In the 1950s, this building had a signboard of "Nanjing Drum Tower Food Store", and citizens simply called it the "Food Building". The second and third floors of the food building belonged to the "Chicken Cing Restaurant", and the "Chicken Cing Soup Dumplings" " was born on the second floor of the restaurant. This floor specializes in selling "cock crow soup dumplings".
Jiming Restaurant opened in 1958 at No. 7 Zhongshan North Road, and later moved into the food building. Many people regard Jiming Restaurant as an ordinary restaurant. In fact, its status is quite similar to Beijing's Sichuan Restaurant, Tanjia Cuisine, Lai Jin Yuxuan, etc. A large number of Huaiyang new dishes are developed and launched here, and Jiming Soup Buns are just One of the most famous examples.
The service of Jiming Restaurant Soup Dumpling Restaurant has the mark of the times and has hardly changed since its inception. As soon as you get to the second floor, you have to queue up to buy "Feizi". Many people don't know what "Feizi" is. In fact, it was originally a long bamboo sign with the name and name of the food purchased written on it with a brush. Quantity was very popular in restaurants in the early years. In ordinary restaurants, "feizi" come in pairs. One is carried to the table for the guests to wait for. When the cook has finished the dishes, the other "feizi" is brought out. When the dishes are served, the waiter takes the ones from the guests' hands. "Fei Zi" matches the "Fei Zi" that comes with the dish, and is taken away together to ensure that the wrong dish is not served. The "Fei Zi" at Jiming Restaurant is single, because there, instead of waiting at the seat, the guests take the "Fei Zi" to get the soup dumplings themselves. I don't know when the bamboo "Feizi" was replaced by the paper one, but people still habitually call it "Feizi".
No matter when you go, you have to queue up to buy "feizi", especially to get steamed buns. Most of the time, seats have to be "snatched". The first group of guests leaves their seats and the next group sits down immediately. The shredded egg soup that goes with the soup dumplings is free. Guests have to go to the window to get it. The transparent and clear soup is topped with some chopped green onion and thin slices of egg pancake. The soup dumplings are both greasy and refreshing.
