The raw materials of distilled liquor are distilled, purified and concentrated into alcohol, which is mainly characterized by high alcohol content, generally above 40%, so it is also called spirits.
The vaporization point of alcohol is 78.3℃, the brewing raw materials are heated to 78.3℃ after fermentation, and the vaporized alcohol can be obtained by keeping this temperature, and then the vaporized alcohol is input into the pipeline for cooling, which is the liquid alcohol. However, in the heating process, substances such as water in the raw materials will also be mixed with alcohol, thus forming different qualities of liquor. Most famous wines adopt different processes, such as repeated distillation or coring, to obtain high purity and low impurity content.
It is especially pointed out that distilled liquor can be stored for a long time at room temperature, generally for 5- 10 years, because of its high alcohol content and low impurity content. Even after the bottle is opened for use, it can be preserved for more than one year without deterioration. Therefore, in bars, spirits can be sold in bulk, mixed and even opened frequently, regardless of whether they will deteriorate soon.
