However, the appeal of the World Wide Fund for Nature (WWF) may make Russians feel unbearable. The agency's branch in Russia said that consumers' love for caviar has caused the number of sturgeon to drop sharply.
Russia (Soviet Union) used to be a big supplier of caviar, but after the disintegration of the Soviet Union, Russia had to give some market profits to countries near the Caspian Sea, such as Azerbaijan, Kazakhstan and Turkmenistan. In addition, the number of sturgeon is decreasing day by day, and the production of caviar has become an environmental protection and ecological problem. Some international organizations have warned caviar exporting countries and asked them to limit the catch and export of sturgeon.
There are many black caviar of unknown origin in Moscow market, which are products of illegal fishing and catching. Therefore, the official production of black caviar in Russia is much lower than the statistics of the World Organization. In the past decade, the number of black caviar exported through official channels has decreased by nearly 2/3, but the products illegally exported have been increasing.
At present, there are more than 2 kinds of sturgeons in the world. Only the eggs of three kinds of sturgeons, Beluga, Asetra and Sevruga, which are produced in the Caspian Sea south of Russia and north of Iran, can be used to make the precious caviar we are familiar with. Beluga, the highest grade, produces less than 1 fish a year, and only the eggs laid by mature Beluga fish over 6 years old are qualified to make Beluga caviar; Secondly, Asetra caviar made from eggs laid by Asetra fish over 4 years old; Then there is Sevruga caviar made of eggs laid by Sevruga fish over 2 years old. The price of 3 grams of superior Beluga caviar is 12 RMB. The higher the grade, the higher the fish fat content in caviar, but the lower the salt content. As a result, the taste is thicker and the flavor is more refined and clear. The more advanced caviar is, the fatter and rounder the particles are, the more transparent and clear the color is, and even the golden glow is slightly flashing. Caviar must not touch metal utensils, because metal will seriously damage the aroma of caviar. Generally, it is eaten in a crystal plate with a shell spoon.
Caviar is known as "black gold", among which caviar produced by white sturgeon costs more than $83 per kilogram in Moscow market, while in London, England, it can cost more than $5, per kilogram.
