"Kouzijiao" has long been a well-known liquor brand.
So, why is this famous liquor named "Kouzijiao"? The origin of the name of China's famous wines is often derived from the place of origin, or the geographical environment and humanistic characteristics of the place of origin. To explore the origin of "Kouzijiao", we must first trace the historical origins of the origin of "Kouzijiao" wine - Suixi, Anhui.
Chinese wine has been a drink for more than 4,000 years, almost in sync with Chinese civilization. The long-famous Kouzijiu is undoubtedly one of the ancient Chinese liquors. The history of winemaking in Suixi dates back nearly 2,700 years. During the Spring and Autumn Period and the Warring States Period, the ancient Suixi River was the mouth where the Bianhe River entered the Suishui River, commonly known as "Kouzi". Suixi River is surrounded by mountains and rivers, with abundant rainfall and abundant grains. Thousands of beneficial microorganisms have flourished in the soil to this day, forming an unreplicable microbial fermentation environment. It is a heaven-sent place for wine making. As a result, local people have made a living by making wine here for generations, and the wine they brew is also named "Kouzi wine" because of the place.
During the Wei and Jin Dynasties, Ji Kang and Liu Ling, representatives of the "Seven Sages of the Bamboo Grove", were born in Suixi. The seven people often gathered under the bamboo forest to drink, sing and express their thoughts, leaving behind lasting stories. In 605 AD, the Tongji Canal, the first phase of the Grand Canal project in the Sui and Tang Dynasties, was excavated, and a canal ferry was built at the Baigou Shuikou of the ancient Suishui River (today's Liuzi Ancient Town, Suixi). The market and commerce became more and more prosperous, and "the canal transport and business travel were incessant." The Kouzi wine produced in Suixi was sold to the north and south through the Grand Canal in the Sui and Tang Dynasties.
In 2008, the opening was composed of an old well dug during the Sui and Tang Dynasties, an old cellar built in the late Yuan and early Ming dynasties and in use for more than 600 years, and a winery complex built in the 1950s. The wine cellar site was rated as an important new discovery in the third national cultural relics census conducted by the State Council. Once again, it proves that Huaibei Kouzi Liquor’s “cellar-flavored wine is far away”.
During the Yuan Dynasty, the Yellow River was irrigated from the south, and the Suishui River gradually became silted up. The imperial court dug ditches to divert the water from the upper reaches into Suishui River. Kouzi Ancient Town became the mouth of the ditch into Suishui River, and the Suixi winemaking industry became the center of the Central Plains wine industry. By the Wanli period of the Ming Dynasty, there were more than 20 brewing workshops in Suixi. Ren Roujie, a hermit in Xiangshan, praised the fine wine of Suixi with the poem "Thousands of drunken families next door, ten miles of fragrance in the altar". Since the first year of Shunzhi in the Qing Dynasty, Suixi has held a "township drinking ceremony" on the fifteenth day of the first lunar month and the first day of October every year. Most of the attendees were local officials, rural gentry and wine shop owners. They first went to each winery to express their congratulations, and then tasted the wines brought by the winery owners, making frank comments to identify the good and bad. Held twice a year, it can be said to be the earliest professional wine tasting event. The ruins of the Ming and Qing brewing workshops in Changfeng Street, Suixi, which are the largest in my country so far, reveal that the brewing industry in Suixi was so developed during the Ming and Qing Dynasties that it had reached the scale of one wine for one city. On May 18, 1949, "State-owned Suixi", the predecessor of Kouzi Liquor Industry, was established on the basis of well-known brewing grain mills such as "Xiaotongju", "Dequanyong", "Fuquan", "Datongju" and "Dasheng". People’s Winery”.
In 1955, Suixi Liquor (commonly known as Kouzi Liquor) produced by Suixi Distillery in Anhui Province was officially named "Suixikouzi Liquor". It was one of the earliest Chinese liquors to have an official brand name after the founding of the People's Republic of China.
In 1959, the cellared Suixikouzi wine was presented as a gift to the 10th anniversary of the National Day, and Kouzi wine entered the list of state banquet wines for the first time.
In 1979, the trademarks "Suixi" and "Kouzi" were registered
In 1979, Kouzi liquor won the title of "National Quality Liquor" at the Third National Wine Appraisal Conference
In 1984, Kouzi Liquor won the Gold Cup Award in the National Light Industry System Liquor Competition. In 1988, Kouzi Liquor won the "National Quality Award of the People's Republic of China"
In 1992, Kouzi Liquor won the Paris International Famous Brand Award. Special Gold Award at the Liquor Exhibition Competition
In 1998, Kouzi Liquor Industry launched the epoch-making "mixed-flavor" liquor, creating a new pattern of Chinese liquor flavors and giving it the name "Kouzijiao". The word "cellar" means cellar wine. It originated in the Northern and Southern Dynasties. It is based on traditional Chinese fermentation and brewing technology, supplemented by other natural fermentations. Liquor is produced through cellar fermentation, steamer pot distillation, sealed vat storage and other processes. There are many kinds of liquors. Pure grains are decomposed and transformed into natural drinks containing complex flavor substances and alcoholic ingredients. It is the origin of traditional Chinese liquor and the benchmark for high-quality Chinese liquor.
In 2003, the state approved the implementation of "regional product protection of origin" for Kouzijiao wine, and delineated the area of ??origin of Kouzijiao wine to include the south of Xiangshan in Huaibei City and the Suixi section of Huaihe River in Huaibei City. North, east of Yueji Township, Huaibei City, west of Laolongji Mountain, Huaibei City, with a total area of ??1,258.8 square kilometers.
In 2010, the National Liquor Standardization Technical Committee and the Aroma Liquor Sub-Technical Committee and Secretariat were established in Kouzi Liquor Industry.
The naming of Kouzijiu has transitioned from the origin of place names to the naming of cellar wines with the original characteristics of liquor. The title also more accurately reflects the quality characteristics of Kouzijiao wines that are truly stored in real cellars.
People say that the value of good wine is determined by time. From Kouzi Liquor 2,700 years ago to the prestigious Kouzijiao Liquor today, the evolution of its name is exactly a 2,700-year history of the development of traditional Chinese liquor.
The name "Kouzi" comes from geography.
The place where two rivers meet is called "Kouzi". "Kouzi Town" in Huaibei is a thousand-year-old town formed by the confluence of Suishui Creek. Because it is an impact plain, a large number of microorganisms have accumulated. The water and soil here are good, the food is good, and there is a microbiome that is most suitable for wine making. More than 2,000 years ago, the Kouzi people made a living here by making wine for generations. The wine they brew is called "Kouzi wine" , Kouzijiao wine has "China's protected origin", and you cannot brew Kouzijiao wine without leaving Kouzi Town.
The leader of Jianxiang liquor
All walks of life have standards. In recent years, Maotai, Luzhou, Jianxiang and other flavor liquors have been sold in Maotai, Wuliangye and Kouzijiao respectively. Under the leadership of the company, we will formulate industry standards for their respective fragrance types. Since the 1990s, Jianxiang Baijiu has developed under the leadership of Kouzi people. In 2010, the National Liquor Standardization Technical Committee was established in Kouzi Liquor Industry.

There is another treasure at the entrance of the 600-year-old Laojiachi, which is the 600-year-old Laojiachi. During the Ming Dynasty, our ancestors used flower soil from the old city to build hair pits. The laojiao mud is also 600 years old. The laojiao mud is fermented for four months, and the kouzi wine brewed is extremely fragrant. These old pit mud are now the treasures of the Kouzi people. Even if it takes another six hundred years to make such good pit mud, these pit pits were rated by the country as one of the top ten important archaeological discoveries in 2008.
