In the past one hundred years, the development and historical evolution of Donglaishun can be divided into two stages before and after the founding of New China.
In the nearly half century before the founding of New China, the entrepreneurship and development history of Donglaishun can, in a sense, be regarded as a microcosm of the development and evolution of Beijing’s modern ethnic catering industry. At the beginning of the last century, the Qing government implemented the New Deal and opened up the market. In 1903, with the emergence of Dong'an Market, the earliest and most famous market in Beijing, brothers Ding Deshan, the founders of Donglaishun Restaurant, came to the north gate of Dong'an Market with a handcart, wooden cases and several benches, and set up a stall selling halal snacks bean juice. , grilled cakes, took the first step of hard work. A few years later, the Ding brothers opened their shop and "Donglaishun" got its name. The name of the shop was first called "Donglaishun Porridge Shop". It was small in scale, just a small wooden shed, and its business types were bean juice, mixed noodles, pies, and haggis. In 1912, a fire broke out in Dong'an Market and the wooden shed was burned down. After the market was rebuilt, Ding Deshan built three tile-roofed houses in the original place, changed the sign to "Dong Laishun Mutton Restaurant", and started selling shabu-shabu. Ding Deshan was born into a poor family. When he started his business, he earned money through his own strength. After he started his business, he still maintained his diligent and thrifty nature and worked hard. Because he was based on integrity, emphasized genuine products, and was good at learning from other people's business methods and production techniques, within a few years, Dong Laishun's mutton-shabu-shabu became as famous as the famous "Zhengyang Tower" in the capital at that time. In the 1920s, Donglaishun improved the hot pot and other utensils for mutton-shabu-shabu. With its unique selection of ingredients, fine processing, complete seasonings and strong firepower, it quickly became the best mutton-shabu-shabu in Beijing. From then on, Donglaishan was unstoppable. Not only did it build high-rise buildings and elegant rooms, but its business varieties also continued to expand and develop, forming a series of halal dishes that integrate fried, grilled, stir-fried and rinsed dishes, which are popular in Sichuan, Shandong, Hunan and Cantonese cuisines. It has become a famous time-honored brand in Beijing. Although, in the nearly half century before liberation, due to frequent wars and social unrest, Donglaishun went through many hardships and experienced several ups and downs, but its business performance has always ranked first in the catering industry in Beijing. Diligence and thrift, adapting to the times, continuous improvement, and pursuing perseverance are the valuable traditional business concepts of Dong Lai Shun; honesty, customer first, good materials and meticulous workmanship, and people who can speak sweetly are the excellent service traditions of Lao Dong Lai Shun. These valuable traditional marketing experiences are always worthy of our inheritance and reference.
Donglaishun's rapid development occurred more than half a century after the founding of New China. In 1955, Donglaishun successfully realized a public-private joint venture with the support of the People's Government. In order to develop national undertakings and carry forward the culinary cultural traditions of ethnic minorities, the party and government have provided strong support and assistance to Donglaishun. Since then, Donglaishun's business scale has continued to expand, its workforce has become more organized, and its technical strength has become stronger.
