Duck Nan'an, a well-known trademark in China, is a famous local product in Jiangxi province. It was first produced in Fangwutang, Nan 'an Prefecture, North Road, Jiangxi Province in the Ming Dynasty (now outside the east gate of Dayu County). It has a history of more than 5 years. It was originally named "Pickling", and the name is still used by people in Dayu County. In 195, it became a commodity and sold to Hong Kong, Macao, Singapore, Malaysia and other places. It is a delicacy for Southeast Asian countries and a treasure for relatives and friends, and is very popular in Southeast Asian countries. Because Dayu was the seat of Nan 'an government at that time, it was named Duck Nan'an.
Duck Nan'an, which is made of Dayu Duck with tender meat, won the silver prize in the Panama World Expo in 1921. In 1981, 1985, 1989 and 1993, he won the Jiangxi Provincial Quality Product Award for four consecutive years, and won the Ministry Excellent Award and the National Silver Award in 1986. Duck Nan'an was included in the book Poultry and Traditional Poultry Products by China Food Corporation, and was listed as one of the four traditional salted ducks in China (Duck Nan'an, Jiangxi, Jianou, Fujian, Nanjing, Jiangsu and Jianchang, Sichuan). Duck Nan'an is known as the "king of wax", and Duck Nan'an is a delicacy in the south of the Yangtze River, especially in southern Jiangxi, and a famous tourist product.
Duck Nan'an is characterized by a flat duck body, a peach garden shape, octagonal ribs and a semicircular tail. The tail oil is plump and not exposed, and the fat and lean meat are distinct, with the shape of lion's mouth, double dragon balls, double hooks and closed knives. The groove can hold one finger, the white edge is one finger wide, the skin color is milky white, the lean meat is sauce-colored, and the taste is characterized by crispy skin, crisp bones, tender meat, moderate salt, and the lean meat is sauce-colored and fat-free. It has the unique flavor of Duck Nan'an, which is incomparable to other preserved meats. Its back is covered with four oblong "Duck Nan'an" vermilion seals, which are parallel to the wing bones and leg bones and are in an inverted figure of eight.
