Specialties of Xi'an:
1. Huanggui Persimmon Cake
Xi'an's persimmon cake is not only made of persimmons, but also uses Lintong's specialty "Huojing Persimmon" The dough is made into a skin, and then mixed with yellow cinnamon, rose, peach kernels, white sugar, rock sugar, green and red silk, etc., and the best suet is stirred into the filling. The surface is golden yellow, and the taste is soft and sweet. It is a seasonal delicacy in autumn and winter every year.
2. Shadow puppets
Shadow puppets are commonly known as "lantern shadow plays" and are known as the "ancestors of film". They are one of the traditional dramas of the Chinese nation. Shaanxi is the birthplace of shadow puppetry, especially in the Guanzhong area. There are hundreds of traditional drama repertoires and dozens of singing styles.
3. Cured beef and mutton
A famous snack in Xi'an, Shaanxi Province, cured mutton is made from carefully selected ingredients, exquisite craftsmanship, complete accessories and proper firepower. The braised meat is ruddy in color, crispy in texture, and mellow and delicious. Cured beef and mutton can be vacuum-packed and are very suitable as specialty gifts for relatives and friends.
4. Huang Guichou Liquor
Huang Guichou Liquor uses high-quality glutinous rice and Xiaoqu as raw materials, and the brewing process is exquisite. In the entire brewing process, there are clear procedures for more than ten processes, including washing the glutinous rice, mixing the koji, loading the jar, and pressing the wine. The finished wine contains the traditional Chinese medicine Huang Gui, which looks like milk. The juice is thick and mellow, sweet and palatable, and the alcohol content is around 15. When drinking, you can put it in a pot of water and heat it to make a hot drink. You can also add sugar according to taste. It is said that the drink in "Li Bai's Hundred Poems on Drinking Wine" was thick wine.
5. Crystal cake
Crystal cake is a kind of pastry, so named because its filling is crystal clear, like crystal. The finished product is crispy and filling, moist and delicious, with clear layers, rich in oil but not greasy, heavy with sugar and sweet in the mouth, and has a rich fragrance of roses and orange cakes. The crystal cake has a golden complexion and is surrounded by snow-white. It is known as the "gold base with silver bellows and a red seal in the center" and is known as "the first of Qin's cakes".
